If you can’t tell from my Instagram feed, let me just come right out and say it: I love breakfast. I mean, love it. I go to bed thinking about what yummy concoction I’ll have waiting for me after my run or some gym time, and I always wake up ready to chow down!
For this early riser, working out first thing is what sets the mood for my day and gets fresh blood pumping. Plus, who doesn’t love watching the sunrise? I often am asked whether I eat before or after my workout, and the answer is: both! Even if I go to bed with a full stomach (not recommended, it’s not v. comfortable), my stomach is always growling by the time I’m up. However, I’m also not about tiny breakfasts (helloooo, this girl likes to eat!), so exercising or running right after diving into a big brekkie (like this bowl of cauli oats), would not sit too well.
So, what’s a girl to do? Well, I like to drink a big glass of water right when I get up then either cut up some fresh berries the night before or pop half a banana or an apple in my mouth to give me a quick energy boost before I hit the road. That way, my hunger isn’t so bad that I can’t workout, but I’m also not full to the brim. Then, I can come home and really go to town.
One of my favorite breakfasts is collagen cauliflower oats! As if cauliflower didn’t get enough love from me, I had to throw it into the breakfast mix as well…but let’s be honest, I’m always game to get a little more veggies in my system!
This recipe is quick and easy, especially if you buy pre-riced cauliflower (like Trader Joe’s Organic Frozen Cauli Rice, or WF has some as well!). Plus, the cauli adds some great nutrients, such as biotin, folate, choline, and some B vitamins! I love the addition of collagen in here too- it helps to make the oats extra thick and creamy (a full post on why I love collagen to come!). The base is mildly sweet, just enough to make it customizable for any flavor you can think of! Go crazy, you creative genius, you!

Collagen Cauliflower Oats
- ¼ cup GF oats
- ½ cup riced cauliflower
- 1 scoop Further Food Collagen (use code: BANANADIARIES10)
- 1 cup homemade nut milk or coconut milk
- ½ tsp organic vanilla extract
- Dash of cinnamon
- Heat nut milk or coconut milk in a saucepan over medium-high heat.
- Add oats, cauliflower, collagen, vanilla, and cinnamon, reduce heat to simmer, cover, and let cook (stirring occasionally).
- Let oats cook for about 5-7 minutes, until they start to thicken.
- Pour oatmeal into bowl and top with desired toppings!
