Trust me, I’m all about the carbs. I love bread (as Oprah says). But I do have to hand it to this recipe, this keto salmon and zucchini noodles is just as satisfying and filling!
It’s packed with protein, dense with nutrients, absolutely delicious, and is perfect for busy week nights when you need to spend less than 30 minutes getting dinner on the table!

The key to lock in flavor for ketogenic recipes is obviously the fat. You need to be generous with the fat, especially when it’s low in carbohydrates, so that you still feel satisfied eating it. I added a decent amount of olive oil, along with plenty of herbs and spices, to complement the salmon and spice up the zucchini and mushroom noodles!
The main flavors of this keto salmon and zoodle dish: thyme, garlic, and rosemary! It really goes well with the organic olive oil. I really do make a point about buying high quality fats. It’s extremely important. Fats are basically the carriers of other macronutrients and micronutrients to the various systems of your body.
There are absolutely ways to make this affordable, which is why I love and use Pompeian. They have a great organic extra virgin olive oil and olive oil spray!
I also recommend buying your salmon wild-caught. It’s obviously more of a seasonal protein, so your fish market or grocery store should have it in season in the summer, but you can also buy it frozen!
So back to this keto salmon and zoodle recipe! You can definitely swap in whatever mushrooms you prefer, but I honestly love Maitake mushrooms. They’re very rich in vitamins B and C. Plus they’re just packed with flavor.
I also paired this meal with a dollop of my paleo vegan cauliflower Alfredo that just so happens to be ketogenic as well! You can smear it on top of the salmon, like I did, for extra flavor!
Now for the zoodles. You can totally buy your zucchini noodles pre-spiraled. However, I always think it tastes better (and fresher) when you spiral them yourself! The trick for making them maintain their shape and sturdiness is making sure to cook the zoodles lightly in the pan, and only for a little!
So I highly recommend cooking the mushrooms and garlic really well first. Then add in the raw zucchini noodles to cook for only a few minutes. You can also eat zucchini noodles raw, but they’ll taste better heated up a bit 😉

Description

Ingredients
- 16 oz raw wild-caught salmon
- 2 large zucchini
- 3/4 cup Maitake mushrooms
- 2 tbsp minced garlic (divided)
- 1 tsp sea salt (divided)
- 1 tbsp thyme
- 4 2-second sprays Organic Olive Oil spray (sub in 2 tablespoons olive oil)
Instructions
- Wash salmon and dry.
- Spray salmon twice with olive oil spray and rub 1/2 tsp sea salt, 1 tbsp of minced garlic, and 1 tbsp thyme onto the salmon. Set aside.
- Spiralize zucchini into thin noodles.
- In a medium skillet, spray with organic olive oil and add garlic to the pan on medium heat.
- Cook until lightly browned, and then add in mushrooms and zucchini noodles.
- Cook until al dente and then remove from heat.
- Plate the noodles and add another spray of olive oill to the pan.
- Place salmon skin-side up onto the pan and cook on medium heat for 5 minutes or until to your desired cooking.
- Flip and cook for 3 minutes.
- Remove from pan and serve on top of zucchini noodles
