Coconut Sugar: you can also use a mix of organic granulated and brown sugar for a more classic cookie effect. Unsweetened applesauce: this replaces eggs in regular baking Baking soda + powder Vegan Chocolate Chips: I recommend Pascha Chocolate, as they're 100% vegan and organic. Vanilla extract

You'll start by creaming together the vegan butter and sugar(s). Add in the applesauce and vanilla extract, and cream again. Then gently fold in the flour mixture, followed by the chocolate chips. Scoop and bake!
