Method: Waffle Maker
1x 2x 3x Ingredients
s coarsely ground 2 cup oat flour
s coconut sugar or cane sugar 2 tablespoon
baking powder 2 tsp
ground cinnamon (optional) 1 tbsp
1 tbsp pumpkin spice blend
arrowroot starch or cornstarch (optional, but recommended) 1/4 teaspoon
s ground flaxseed *mixed with 1/3 cup water, set for 2 tablespoon 5 minutes
dairy free milk *mixed with 1 teaspoon apple cider vinegar 1 cup
1/3 cup pumpkin puree
vanilla extract 1 teaspoon
cooking oil for waffle machine 1 tablespoon Toppings of choice: berries, coconut cream, chocolate chips, nut or seed butter
Prepare the flaxseed mixture and vegan buttermilk first. In a large bowl, whisk together the flour, coconut sugar, baking powder, cinnamon, pumpkin spice blend, and arrowroot together.
Add in the ground flaxseed mixture, dairy free milk mixture, pumpkin puree, and vanilla extract. Mix until there are no more clumps of flour.
Heat the waffle machine and brush the cooking oil onto the waffle machine. Let the oil sit there for a minute to heat.
Prepare the waffles according to your waffle machine. I recommend using 2/3-1 cup batter per waffle.
Gently remove the waffle from the machine and serve with desired toppings.
