The easiest vegan pumpkin waffles ever

I’m quite obsessed with these vegan pumpkin waffles, and not just because I love all things pumpkin.

I actually based these pumpkin spice waffles off of my favorite gluten free vegan waffle recipe that uses just oat flour!

It’s quite literally the easiest waffle recipe you will ever make, and it tastes like autumn on a plate.

These pumpkin waffles are super fluffy and light yet full of sweet pumpkin pie spices and cozy cinnamon for the ultimate fall breakfast on a chilly day!

What’s more, these vegan pumpkin waffles are completely free of the Top 8 Allergens, including being gluten free, dairy free, nut free, soy free, egg free, and vegan!

What’re the ingredients for these easy vegan pumpkin waffles?

Another part of this healthy pumpkin waffle recipe that I love is how simple the plant based ingredients are. For these vegan pumpkin waffles, you’ll need:

  • Oat flour (if you’re not gluten free or prefer regular flour, you can use all-purpose. However, I highly recommend oat flour here- it adds a bit of a rustic taste to the waffles!)
  • Cinnamon + Pumpkin spice blend (you can purchase the pumpkin spice blend or make your own)
  • Coconut sugar
  • Dairy free milk with apple cider vinegar (to create a vegan buttermilk)
  • Flaxseed
  • Pumpkin puree
  • Leavening agents + arrowroot powder (if you don’t have arrowroot powder/starch, you can use cornstarch as well)

Once you have all of the ingredients ready, you’re 10 minutes tops away from the best pumpkin waffle recipe you’ve ever made!

How to make vegan pumpkin waffles from scratch

The full written instructions and ingredient measurements are found down below in the recipe card. However, I wanted to highlight a few tips here to ensure that your gluten free vegan waffles come out perfectly every time:

  1. Preparing the dry ingredients: make sure that you use a whisk to ensure that the dry ingredients are mixed properly. Not using a whisk may result in the dry ingredients not being distributed evenly and will potentially alter the results of your pumpkin waffles. You can use oat flour, gluten free 1:1 flour (such as Bob’s Red Mill 1:1 baking flour) or all-purpose flour, and coconut sugar or regular sugar for swaps.
  2. Make the vegan pumpkin waffle batter: next, you’ll add in the wet ingredients. Nothing needs to be room temperature here. I recommend getting the vegan buttermilk and flaxseed mixtures started before the dry ingredients so that you can add them right into the batter.
  3. Heat the oil on the waffle maker for a few minutes: allow the oil to continue heating for a minute even after the waffle maker says it’s ready. This will ensure that the oil is properly heated so that your gluten free pumpkin waffles won’t stick to the waffle maker.
  4. Follow the instructions of your own personal waffle maker: each waffle maker is at the very least slightly different so make sure that you read the manufacturer’s instructions to know how to cook the pumpkin waffles perfectly.

How long do you cook waffles in a waffle maker?

I use this Cuisinart waffle maker, which actually indicates with a light when the waffles are ready. I highly recommend a waffle maker that will let you know when the waffle is done!

That being said, if your waffle maker doesn’t have a light, the time is usually about 3-4 minutes, depending on how high you set the heat.

To test to see how long the waffles will take, use a little bit of batter to test once the waffle maker has heated.

What to top pumpkin waffles with

Of course, my favorite part about eating these vegan pumpkin waffles is getting to top my waffles!

I personally love topping my vegan pumpkin waffles with coconut cream and maple syrup!

These waffles also taste amazing with some vegan chocolate chips and peanut butter.

You can also top your vegan waffles with these combos:

  • Dairy free Greek-style yogurt and maple syrup
  • Sliced banana, maple syrup, and extra cinnamon
  • Chopped walnuts or pecans and coconut cream
  • Raw pumpkin seeds, dried cranberries, and cinnamon
  • Pomegranate seeds, cinnamon and vegan butter

Description

These easy one bowl vegan pumpkin waffles are so incredibly simple and ready in less than 10 minutes! Made from oat flour, cinnamon, and pumpkin puree, these pumpkin waffles are a family favorite and perfect fall weekend breakfast! 


Ingredients

Scale
  • 2 cups coarsely ground oat flour
  • 2 tablespoons coconut sugar or cane sugar
  • 2 tsp baking powder
  • 1 tbsp ground cinnamon (optional)
  • 1 tbsp pumpkin spice blend 
  • 1/4 teaspoon arrowroot starch or cornstarch (optional, but recommended)
  • 2 tablespoons ground flaxseed *mixed with 1/3 cup water, set for 5 minutes
  • 1 cup dairy free milk *mixed with 1 teaspoon apple cider vinegar
  • 1/3 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 tablespoon cooking oil for waffle machine
  • Toppings of choice: berries, coconut cream, chocolate chips, nut or seed butter

Instructions

  1. Prepare the flaxseed mixture and vegan buttermilk first.
  2. In a large bowl, whisk together the flour, coconut sugar, baking powder, cinnamon, pumpkin spice blend, and arrowroot together.
  3. Add in the ground flaxseed mixture, dairy free milk mixture, pumpkin puree, and vanilla extract. Mix until there are no more clumps of flour.
  4. Heat the waffle machine and brush the cooking oil onto the waffle machine. Let the oil sit there for a minute to heat.
  5. Prepare the waffles according to your waffle machine. I recommend using 2/3-1 cup batter per waffle.
  6. Gently remove the waffle from the machine and serve with desired toppings.

Notes

*Please prepare the flaxseed mixture and vegan buttermilk before whisking the dry ingredients.

You can also use gluten free 1:1 baking flour or all-purpose flour in place of oat flour.
