Paleo Cinnamon Swirl Banana Bread


Description

This paleo cinnamon swirl banana bread is incredibly sweet with no added sugar in the bread! Just a little maple syrup in the paleo cinnamon streusel, this banana bread is gluten free and the perfect breakfast or snack!

Ingredients

Paleo Banana Bread: 

  • 3 large extra ripe bananas
  • 3 large eggs
  • 1/2 cup coconut flour
  • 1/2 cup smooth almond butter
  • 1 tbsp baking powder or paleo baking powder mixture
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt

Paleo Cinnamon Streusel Swirl:

  • 1/2 cup coconut flour
  • 1/2 cup coconut oil
  • 1/3 cup maple syrup

Instructions

  1. Preheat oven to 350F and line a 9″ loaf pan with parchment paper and/or coconut oil
  2. In a large bowl, mash bananas together.
  3. Add in eggs, vanilla, and almond butter, and whisk together.
  4. Fold in coconut flour, baking powder, baking soda, cinnamon, and sea salt.
  5. Mix thoroughly and set aside.
  6. In a medium bowl, whisk together cinnamon streusel swirl ingredients.
  7. Pour half of the banana bread batter into the loaf pan.
  8. Top with half of the cinnamon swirl topping.
  9. Pour the remaining banana bread batter on top and top with cinnamon swirl topping.
  10. Place in the oven and bake for 40-45 minutes, or until lightly browned on top.
  11. Let cool before slicing!
