Description

The EASIEST vegan quinoa burgers you’ll ever make! Made from only 5 ingredients and only 5 minutes of work, these mushroom quinoa burgers are the perfect option for your vegan barbecue!

Ingredients

Scale
  • 2 cups cooked quinoa
  • 1 cup chopped baby bella (cremini) mushrooms
  • 2 tbsp ground flaxseed with 6 tbsp water, allow it to sit for 5 minutes
  • 1/3 cup cassava flour
  • 1 tbsp coconut aminos
  • 2 tsp sea salt
  • 1 tbsp coconut or olive oil, melted
  • Optional but recommended: 1 tsp thyme, 1 tsp parsley, 1 tsp basil, 1 tbsp tomato paste or sugar free ketchup

Instructions

Baking Option:

  1. Preheat the oven to 375F and line a baking sheet with parchment paper. Brush the parchment paper with 1/2 tbsp melted coconut oil or olive oil.
  2. In a large food processor, pulse all of the ingredients together until smooth.
  3. Scoop about 1/2 cup of the quinoa burger batter into your palms and form it into a patty. Place onto a baking sheet and repeat for the remaining batter. You should get about 4-5 patties.
  4. Brush the remaining melted coconut oil or olive oil onto the tops of each patty and place into the oven to bake for 30 minutes.
  5. After about 20 minutes, flip the patties over to cook on the other side for the remaining time. The quinoa burgers should be browned and completely set.
  6. Serve on vegan hamburger buns and enjoy! Store any leftovers in an airtight container in the fridge for up to 1 week or in the freezer for up to 3 months.

Grilling Option:

  1. For this option, you’ll still need to bake them for a few minutes before grilling, so complete steps 1-4, modifying step 4 to only bake for 20 minutes.
  2. After 10 minutes in the oven, flip the patties onto the other side to cook on the opposite side.
  3. Remove the patties from the oven and prepare the grill. Cook each patty on the grill for 1-2 minutes on each side.
  4. Serve on vegan hamburger buns and enjoy! Store any leftovers in an airtight container in the fridge for up to 1 week or in the freezer for up to 3 months.
