Gingerbread cookies are probably one of my favorite flavors of the holiday. Next to the sugar cookie of course. They’re spicy, warming, and sweet, the kind of comfort you look for during the holiday season.

Baking cookies is one of my favorite holiday activities too, so I’m rather surprised it’s taken me this long to come up with my own gingerbread cookies! I think these and sugar cookies are probably the easiest to make (though stay tuned, because I have way more cookies coming to you shortly!). Sprinkled with a little sugar on top, and these are ready for any cookie party!

Now what flour did I use? Well, I’ve really been experimenting with all types of flours out there, gluten and gluten-free. These babies are completely gluten-free, but I’m sure they would work just as well with regular all-purpose flour! I wouldn’t recommend swapping in a paleo flour, like almond or coconut, because I haven’t tested it, but from my experience, you’d really have to rework the recipe.

So in this recipe, I stuck with good ol’ oat flour! Which now you can purchase organic too! I found Arrowhead’s for only $1.99 (this link will give you 6 bags!) in Whole Foods the other day (which honestly doesn’t even compare in price to that of cassava flour…at $18/bag). So I stocked up on a few bags, as well as some spelt flour (I’m really loving exploring these different flours!), and headed back to the kitchen!

Now back to the gingerbread cookies…For the sugar, I used maple syrup and molasses- you cannot have gingerbread cookies without molasses so please please please don’t forget this one! Plus, molasses is actually full of really cool nutrients (I know, surprising for a sugar! See, it ain’t all bad!), so you’d be missing out on not only flavor, but a better nutrition profile as well! Plus, I threw in some Moodbeli Calming Ginger Powder, which is a blend of organic Ashwagandha and organic ginger to soothe your nervous system and warm you up with spices. They’re one of my all-time favorite companies- good people, good ideas, and good intentions. It’s all about the intentions for me!

The dough was really easy to make, and I didn’t even chill it too- just popped it right into the oven! Looks like I’m giving the old Pillsbury dough boy a run for his money 😉 Just kidding, my childhood favorite will always be those pre-made sugar cookies with the different designs in them (like Christmas trees, pumpkins, ornaments…all of it!). Haven’t had those in years actually…maybe that should change this season!

Now there’s an ingredient in here that I didn’t mention on the list, but I do feel the need to mention it here. The final ingredient is love. Make things with love, and they’re sure to bring you health, joy, and happiness. I swear, there’s something in the taste that just alters! And it’s what I teach my ladies in Healing 360- bring love and gratitude to all that you eat and make for others, and food can do you no harm. Only good.

Ingredients

Scale
  • 2 cups organic oat flour
  • 1/2 cup coconut oil (melted)
  • 3 tsp Moodbeli Calming Ginger Tonic
  • 2 tbsp ground ginger
  • 2 tbsp ground cinnamon
  • 1/2 tbsp ground cloves
  • 1/2 tsp sea salt
  • 3 tbsp maple syrup
  • 2 tbsp blackstrap molasses

Instructions

  1. Preheat oven to 375 and grease a cookie sheet with some coconut oil
  2. In a large bowl, whisk together oat flour, Moodbeli, ginger, cinnamon, cloves, and sea salt.
  3. Add in coconut oil, maple syrup, and molasses into the dry ingredients bowl and knead with your hands until it is a soft dough.
  4. Roll about a tablespoon of dough and place onto the cookie sheet, and continue for each cookie.
  5. Take the back of the spoon and lightly press down on the top to soften the cookie.
  6. Bake for 15 minutes or until crispy on the outside.
