Deliciously easy vegan almond cake made from 7 simple gluten free ingredients! Perfect as a healthy morning treat or snack!

I love a good scone or cinnamon roll, but sometimes you just need something a little lighter, you know?
Lately, I’ve been loving all of the citrus and almond combinations, so I decided what better way to celebrate the season than with a refreshing and easy vegan almond cake?!
I bet you’re also wondering how and why is Yogi® Sweet Clementine Stress Support tea incorporated into a cake?! Well, we’re actually going to steep the tea in the coconut milk, which creates even more flavor and zest to the gluten free almond cake!
Now simple is great, but why else is this the best almond cake recipe?
This light and refreshing tea cake is fluffy and sweet, the perfect combination of both moist and not gooey, and the real kicker: it’s completely gluten free, vegan, dairy free, refined sugar free, low in sugar, and gum free.
But still all of the flavor or a deliciously easy almond cake that pairs perfectly with a full cup of tea 🙂
How to make a gluten free vegan almond cake
Okay so just how easy is this gluten free almond cake?
Well, it comes together in one bowl, but we do need to prep two things beforehand; that is, the vegan flaxseed “egg,” and the coconut milk steeped with Yogi® Sweet Clementine Stress Support tea.
To do the pre-steps, simply combine the ground flaxseed with some water and let that sit for 5-10 minutes. While the flaxseed is resting, heat the coconut milk to a boil, and let the Yogi® Sweet Clementine Stress Support tea steep for 5-10 minutes as well.
When that’s all said and done, simply:
Whisk together the almond meal, oat flour, coconut sugar, baking powder, and baking soda in a medium bowl.
When ready, add in the flaxseed “eggs,” steeped dairy free milk, and vanilla extract to the dry ingredients, and mix until thoroughly combined.
The batter should be thick so it won’t really pour. Spoon the batter into the middle of the springform pan and spread out so that it touches the edges.
Sprinkle the slivered almonds on top of the batter, and place the almond cake into the oven to bake for 35-42 minutes, or until the toothpick comes out clean.
Then all you have left to do is slice and serve!
Almond cake variations:
Now if you want to switch up the flavors a bit, I have some flavor recommendations:
Instead of doing just a teaspoon of vanilla, add in a tablespoon and about 1/2 cup chopped fresh red cherries.
Add in a tablespoon of vanilla and 1/2 cup fresh raspberries for a fresh berry taste!
Make it a chocolate chip almond cake by adding in a 1/2 cup vegan dairy free chocolate chips.
You can add in a second (or even third!) nut on top and into the batter! Go with walnuts or cashews for a slightly sweeter taste!

Hi Daniella! You can use any tea that you’d like, but I definitely recommend a clementine or citrus flavor tea!
