Growing up, one of my all time favorite candy bars in the entire world was Snickers bars. I just loved the combination of the rich chocolate, the nutty peanuts, and of course, the sweet caramel sauce holding it all together!

In fact, my love of Snickers went so deep that I’ve even recreated the candy bar into a vegan (almost Paleo!) version! But naturally, that was not enough to satisfy my major sweet tooth (I mean, have you seen the pattern of recipes on here? Ha!).

Nope, I took it a step farther and made it into a delicious, creamy no churn vegan ice cream! In fact, I was able to partner with my absolute favorite date company (and yes, I mean the fruit, not the act of dating someone ha!), Joolie’s, to really make this vegan Snickers ice cream come to life 🙂

I’ve actually been a huge fan of Joolie’s dates for a while, so I was so excited when they reached out to me to see if I had anything fun “cooking” up for summer with dates!

Well…it’s not exactly “cooking,” but rather swirling, if ya catch my caramel-y drift 😉

What I love most about Joolie’s is that not only are they dedicated to quality (while making organic affordable), they also really value family and kindness. Family meaning from their family farm to their coworkers and customers, and kindness meaning you get what you give out, so make sure it’s kind and pure of heart.

I mean, if that doesn’t make you feel good, then I don’t know what will! So I actually decided to make this no churn Snickers ice cream with a homemade vegan date caramel sauce that I’ve made previously, and it worked so beautifully.

This ice cream is swirled to perfection with creamy caramel ribbons, packed with chocolate chips, and embedded with peanut crunchies throughout. I mean, does ice cream get any better?

Vegan Snickers Ice Cream Ingredients

Sweet Potato: naturally, this recipe includes sweet potatoes haha! Now, for this particular almost Paleo Snickers ice cream, I used Japanese sweet potatoes to help with the scoop-ability and and the color of the actual ice cream. I find that using just coconut cream in a homemade vegan ice cream makes it hard to scoop, so I used my Paleo vegan vanilla ice cream as the base, and it came out wonderfully! You can also use a regular sweet potato, but vegan Snickers ice cream will be orange instead of cream colored 😉

Coconut Cream: what I love most about this no churn vegan ice cream Snickers ice cream is that it actually doesn’t require that much liquid! This is because unlike regular dairy ice cream, coconut cream tends to separate from the water a lot easier, so only a little is required for the creaminess of the ice cream.

Vanilla: because we can’t have a vanilla base to this almost Paleo Snickers ice cream without vanilla extract!

Maple Syrup: just a touch for sweetness in the base of the ice cream, but you can totally omit it, and your vegan Snickers ice cream will still taste sweet! That’s all thanks to the beautiful date caramel sauce, which is below!

Date Caramel Sauce: the key to this no churn Snickers ice cream! For the date caramel sauce, all you’ll need are Joolie’s organic pitted dates, coconut cream, and vanilla! You can add sea salt if you’d like, similar to what I did, or just leave it completely sweet 🙂 Making the caramel sauce takes all of 20 minutes max, which is why I love this homemade vegan caramel sauce so much!

Peanuts: I used organic roasted peanuts here!

Chocolate Chips: feel free to use whichever chocolate chips make your heart happy!

Do I need an ice cream maker to make homemade vegan ice cream?

Nope, not at all! I will say that it makes life very easy to have a large food processor on hand, but a decent sized blender will work as well 🙂 That’s what I love about this no churn vegan ice cream- it’s just so easy!

You barely need to make anything other than pressing blend on your food processor or blender! Then you just stir in the ingredients 🙂

But let’s get to walking through this homemade snickers ice cream now 😉

How to make no churn snickers ice cream

To start, it helps to have the date caramel sauce completely prepared. This only takes 15-20 minutes! Also, make sure that your sweet potatoes have been baked and cooled before beginning. Peel away the skin and make sure that they’re completely cooked through. If you need some reference for the most perfectly baked sweet potato, check out this post here 🙂

Next, place your cooked sweet potatoes into a large food processor and blend them until they’re nice and smooth, like below.

Add in the coconut cream, vanilla extract, and maple syrup, and blend again until it’s creamy and thick!

Pour the homemade vegan ice cream batter into a lined 8″ baking dish with parchment paper (this makes for easy scooping and clean up), and then add in the peanuts and chocolate chips.

Mix them thoroughly around in the no churn vegan ice cream batter until they’re evenly distributed throughout the ice cream. Next, take a few dollops of salted date caramel sauce and plop them on top of the ice cream.

Swirl the caramel lightly throughout the ice cream, making sure not to over-mix. You want to be able to see those nice caramel ribbons in your vegan Snickers ice cream!

Top with a few more chocolate chips and peanuts if you’d like (I mean, why not?!), and then allow your homemade Snickers ice cream to set for about 4-6 hours.

When ready to serve, simply remove from the freezer to unthaw for 15 minutes, and then scoop away!

Instructions

  1. Line an 8” loaf dish with parchment paper.
  2. In a large food processor, blend the sweet potato until smooth.
  3. Add in coconut cream, maple syrup, and vanilla extract and puree until smooth.
  4. Pour the sweet potato ice cream batter into the baking dish.
  5. Sprinkle in the peanuts and chocolate chips on to the ice cream batter and mix in thoroughly.
  6. Place dollops of date caramel sauce on top of the sweet potato ice cream batter, and lightly swirl the caramel into the ice cream, making sure not to over-stir and lose the ribbons of caramel.
  7. Add any additional peanuts and/or chocolate chips on top if desired.
  8. Place the ice cream into the freezer to freeze for about 4-5 hours.
  9. Allow to thaw for 15 minutes before serving!
