Roasted Mashed Cauliflower with Paleo Vegan Gravy

So naturally, I had to kick it off with a twist on a very classic recipe. You probably see mashed potatoes and gravy at your Thanksgiving table every year. Well, this year, I highly recommend you try out this mashed cauliflower with vegan gravy…that just so happens to be completely Paleo, dairy free, soy free, nut free, anddddd has the option of being Keto.
But trust me. As Charlie Brown would say, it’s “good gravy.” And mash. It’s just all of the flavors that you love about Thanksgiving, but in a dish that anyone and everyone can enjoy!
The mashed cauliflower has all of the flavors and texture of regular mashed potatoes, in lower carb form, and the vegan gravy tastes nearly identical to regular gravy: smooth, creamy, and rich in flavor and texture.
Plussss I have a few tricks as to how this recipe with this tool is going to make your life a heck of a lot easier during the holidays.
My favorite new kitchen tool
So if you’ve been around the Banana Diaries blog, you know my love of the food processor runs deep. It’s used in probably about half of all of my recipes!
When Oster Kitchen reached out asking if I would be interested in creating a recipe using their new Texture Select Pro Blender with food processor, I couldn’t resist. And it’s available at Target, aka my kitchen tool savior.
I mean, a blender and a food processor, plus all the fun gadgets and setting to go along with it?! It’s a cook and baker’s dream!
This blender with a food processor attachment is extraordinarily simple to use and makes the process of getting Thanksgiving dinner ready a heck of a lot easier. You literally can make two (or more, really) recipes seamlessly with one machine.
For this mashed cauliflower and vegan gravy recipe, I decided, why not incorporate both the blender and the food processor into the mix?!
So, we’ll first go over how to make the Paleo vegan mashed cauliflower in the food processor, then switch gears (quite literally) to how to make the gravy in the Oster Kitchen Texture Select Pro Blender!
How to make Cauliflower Mash
As I’ve mentioned earlier, making the mashed cauliflower portion of this recipe is very simple thanks to the blender.
I know that many people prefer to mash their cauliflower, but I’ve truly found wonderful results if you just don’t over puree it. Less arm work for you, and you don’t need a potato masher (truthfully, I think I’ve lost mine haha! I can’t find it for the life of me!).
To start, all you’ll need for this cauliflower mash recipe is:
- Cauliflower
- Olive oil
- Sea salt
- Coconut milk
Then we can get to making our mash! You’ll just need to follow a few simple steps:
- Roast the cauliflower with sea salt and olive oil. This will take about 35-45 minutes.
- Then place the roasted cauliflower and coconut milk into the food processor unit of the Oster Kitchen Texture Select Pro Blender and place the setting to food chop. Puree the cauliflower until it’s slightly smooth, but more on the chunky side, and that’s it!
- Spoon the mash into a bowl and set aside for gravy time!
How to make vegan gravy that’s Paleo…and nut free!
I’m not kidding when I say this is the best gravy recipe I’ve ever had, and yet it’s entirely vegan, dairy free, and Paleo!
Crazy right?!
Now, you’re probably wondering the heck is in here that a vegan gravy tastes like regular gravy. Well, I have no secrets, my friend! Here’s what you need:
- Vegetable stock
- Vegan butter or coconut oil
- Garlic & herbs, such as rosemary and thyme
- Coconut aminos (here’s that soy free trick!)
- Cassava flour (or coconut flour if you’re keto!)
- Coconut milk
- Mushrooms
That’s the trick! This gluten free gravy is in the mushrooms. They add such flavor and texture, it’s an ingredient not to be missed.
1) Combine the ingredients
The first step in the gravy process is basically just combining all of the ingredients in a medium saucepan. You’ll start with the herbs and vegan butter, then add in the remaining ingredients.
Let everything cook together in the pot, as this enhances all of the flavors.
2) Puree the sauce
Next, pour the sauce, including those mushrooms, into the blender unit of the Oster Kitchen Texture Select Pro Blender, then set the setting to medium and pulse until there are no more mushroom chunks.
Unlike the mashed potatoes, we do want the gravy to be smooth.
Then just pour your vegan gravy into your grandma’s favorite gravy boat, and there you go!

Ingredients
Mashed Cauliflower:
- 3 cups cauliflower florets
- 1 tbsp olive oil
- 1 tsp sea salt
- 1/2 cup coconut milk
Paleo Vegan Gravy:
- 3 cups vegetable broth
- 2 tbsp vegan butter or coconut oil
- 1 tsp minced garlic
- 1 cup mushrooms, sautéed in olive or coconut oil
- 1/4 cup cassava flour (or coconut flour for keto)
- 1/2 cup coconut milk, unsweetened
- 1 tbsp coconut aminos
- 1 tbsp fresh rosemary
- 1 tbsp fresh thyme
- 1/2 tsp sea salt
Instructions
Mashed Cauliflower:
- Preheat the oven to 375F and line a baking sheet with tin foil.
- Toss the cauliflower in olive oil and sea salt, and spread onto the pan to roast for 35-40 minutes.
- Remove from the oven and let cool for 10 minutes before placing into the food processor unit of the Oster Kitchen Texture Select Pro Blender.
- Place the cauliflower into the food processor and add in the coconut milk.
- Set the settings to food chop and puree until slightly smooth, but still with some chunks of cauliflower.
- Scoop the cauliflower into a bowl and set aside.
Paleo Vegan Gravy:
- Make sure that you sauté the mushrooms before beginning.
- In a medium saucepan, heat the vegan butter until melted on medium heat.
- Add in the minced garlic, rosemary, and thyme, and sauté until fragrant and the garlic is slightly browned.
- Reduce the heat to simmer and pour in the vegetable broth, coconut aminos, and coconut milk until well combined.
- Add in the cassava flour and stir until dissolved. Then add in the mushrooms and let the sauce cook for 5-7 minutes on low so that the flavors marinate.
- Use the blender unit of the Oster Kitchen Texture Select Pro Blender, and pour the gravy into the blender, then place the lid on.
- Set the settings to medium and pulse until smooth.
- Pour the gravy into a gravy boat and serve.
