Spring has officially sprung with this insanely delicious, super moist, and shockingly sweet Paleo strawberry banana bread- that has no added sugar! Can you believe that?

Well, I’m magic, so you better believe it! 😉

But seriously, this banana bread is about to become your new weekly rotation for sweets and breakfast treats! It’s freakishly easy, grain free, and even has an easy vegan option for my plant based readers (or if you’re trying to save some cash on eggs because organic eggs are not cheap!).

Forget all of the other baked strawberry recipes out there, you’re going to fall in love with this one!

A banana bread with no added sugar!

Yes, that is correct! This gluten free strawberry banana bread has no added sugar in it- the only sweetness comes from the bananas and the strawberries!

No maple syrup, no cane sugar, no coconut sugar, nada!

But don’t worry- this banana bread is still very sweet. That’s why I recommend sticking with very ripe bananas and the freshest strawberries! Those fruits combine will just add the perfect sweetness to this Paleo banana bread 🙂

Strawberry Banana Bread Ingredients:

Bananas: well we can’t have banana bread without bananas, can we?! For this recipe, we’re going to be using 4 instead of 3 bananas, like in my original recipe. Make sure that they’re extra ripe, as these bananas are the only sweetener that we’re using in this Paleo strawberry banana bread!

Coconut Flour: the only flour that we’re using in this bread, and it certainly works very well! I would not recommend swapping in another flour here, because there’s so much moisture in this particular banana bread that we need something to absorb all that moisture from the fresh strawberries!

Eggs: you can absolutely swap in ground flaxseed here instead of eggs! Just use an equal ratio of flaxseed egg to egg! So that means since there are 3 eggs in here, you’ll need about 3 tbsp ground flaxseed mixed with 1/3 cup filtered water. Let it sit and thicken- then you’re ready to go!

Almond Butter: this is what makes this strawberry banana bread oil free too! I used almond butter to not only add to the texture of the bread, but also give it a light nutty and sweet flavor 🙂 If you’re nut free, feel free to swap in coconut butter or your favorite seed butter!

Vanilla Extract: just a little goes a long way 🙂 I love a good vanilla flavor!

Strawberries: because spring and summer are the leaders of all strawberry recipes, and some fun baked strawberry recipes as well (like this one!), we’ll be using fresh strawberries for this recipe 🙂 Make sure to choose organic strawberries here, as strawberries are on the dirty dozen list for fruits and veggies that you should definitely purchase organic!

Chocolate Chips: my favorite part 🙂 Because banana bread really isn’t banana bread without some chocolate chippers! (Yes, I know, I am a weirdo, and I fully and whole-heartedly embrace that!).

Fresh or Dried Strawberries?

I know a lot of people might be thinking that adding dried strawberries to this banana bread recipe might be the right call because there’s a lot of moisture going on in this strawberry banana bread. And we don’t want a bread that’s falling apart!

Personally, I think adding fresh strawberries makes for the best taste and consistency. And because I don’t want to compromise the structure of this Paleo strawberry banana bread, I made adjustments to my original Paleo banana bread to account for these necessary changes 🙂

Now, Paul Hollywood might disagree with me on this because he did say that Rahul should have gone with the freeze dried raspberries in his madeleines (I’m a big Great British Bake Off fan ha!). Whenever you’re using with baked strawberry recipes (or any fruit recipes for that matter), you’re going to have the potential problem of too moist of an end product. However, this may only be the case for more traditional baking 😉

Because fresh strawberries obviously contain more moisture than dried strawberries, I decided to add in more coconut flour, raise the temperature of the oven, and let the strawberry banana bread cook longer than my standard Paleo banana bread.

This yields the best results for texture, consistency, flavor, and structure! So make sure to follow these steps listed in the directions!

Is chocolate Paleo and vegan friendly?

Well, I always need chocolate in banana bread, no matter if it’s a strawberry recipe, regular recipe, or already chocolate recipe.

So naturally, I added some chocolate chips into this gluten free strawberry banana bread!

Now, I’ve gotten some questions as to whether or not chocolate is considered Paleo and/or vegan friendly. The truth is, it depends on the brand! I have a few of my favorite go-to’s, which I’ll explain in a moment, but like I always say, just check the packaging. If it contains dairy, it’s most definitely not vegan, and if it also contains sugar, then it’s not considered Paleo.

There is some controversy as to whether or not stevia is considered Paleo, and the short answer is that the actual stevia plant is indeed considered Paleo. Stevia, however, can sometimes be highly processed, rendering it into the white powder that it’s more commonly associated with.

Personally, I eat chocolate chips that are considered 50% cacao to 100% cacao. Some contain sugar, some stevia, but honestly, I just do what makes me happy as long as it’s in alignment with also being a conscious consumer (I try to support companies that are sourcing correctly).

My favorite brands to use personally are Lily’s Sweets Chocolate and Pascha Chocolate (they have 50%-100% chocolate! For the real chocolate lovers, check out the 100%!).

Honestly, I could go on about chocolate, it’s my favorite food! But since this is a recipe about Paleo strawberry banana bread that happens to contain chocolate chips in it, I guess I’ll get back on topic 😉

This banana bread is perfect for a summer or spring gathering, or as an easy and healthy breakfast to have throughout the week! I love pairing a slice with a little nut butter on top and having a cup of coffee on the side 🙂 Or it tastes amazing when crumbled in a yogurt bowl!

Description

Ingredients

Scale
  • 4 large ripe bananas
  • 1 cup coconut flour
  • 1/3 cup almond butter
  • 3 flaxseed eggs, or regular eggs if not vegan
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt
  • 1 tbsp baking powder, or Paleo baking powder combination*
  • 1 tsp baking soda
  • 1 cup sliced strawberries
  • 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 375F and grease a 9″ loaf pan with coconut oil or preferred oil.
  2. In a large bowl, mash bananas until there are no chunks.
  3. Add in eggs, vanilla extract and almond butter to the banana and mix until well combined.
  4. Add in coconut flour, sea salt, baking powder, and baking soda, and mix until well combined.
  5. Fold in strawberries and chocolate chips.
  6. Pour batter into the greased loaf pan and top with sliced bananas and extra chocolate chips if desired.
  7. Place into the oven and and bake for 40-45 minutes, or until toothpick comes out clean.
  8. Remove from the oven and let cool for 15 minutes before removing from the loaf pan.
  9. Store in the fridge for a week or freezer for a month!

Notes

* to make Paleo Baking Powder, combine 2 tsp baking soda with 1 tbsp apple cider vinegar or white vinegar. Let sit until it begins to fizz and then add to the batter.
