Want to know a secret? I was never a chocolate cake fan when I was a kid! Always loved vanilla cake with vanilla buttercream…I know, I sound so boring, but vanilla is the foundation of every flavor! It couldn’t be chocolate with chocolate, it couldn’t be chocolate with vanilla or vanilla with chocolate. It had to be vanilla cake with vanilla icing. But here’s another secret: this vegan chocolate bundt cake completely turned me!

Especially considering the fact that this healthy bundt cake is not only vegan, but also gluten free and refined sugar free! And I somehow managed to make a gluten free cake with gluten free flour that wasn’t dry as wood chips nor taste like cardboard!

This vegan chocolate bundt cake is about to be the star of your next celebration. Whether it’s a birthday, St. Patty’s Day, Easter, Christmas, you name it! This is a cake that everyone will enjoy and can be made completely nut free and low in cost!

You see, I know that these specialty ingredients can get quite pricy. The only ingredient that I think might be out of the norm for most people would be the ground chia or flax seed. I use this because to make the a vegan bundt cake stay together, you need something to bind it other than eggs!

Now I bet you’re also wondering how in the heck did I make this gluten free bundt cake not taste like cardboard or like you need a large glass of water to chase it down!

Well, I will say, gluten free flours are very hard to work with sometimes. That’s why I highly recommend using a trusted 1:1 gluten free flour mix, such as Bob Red Mill’s or King Arthurs. I know that Arrowhead Mills also has some great mixes, and they’re fairly priced too!

Now, you’ll also need a lot of liquid in order to make this chocolate bundt cake moist and decadent! I recommend not only using the nut/coconut milk (or your favorite dairy free milk!), but also using two types of fats here: vegan butter or nut butter PLUS coconut oil.

These are just some big tips that I wanted to get out of the way before diving into the rest of the ingredients! That way you can make this chocolate bundt cake absolutely delicious and decadent, the way it should be!

Vegan bundt cake ingredients:

1:1 Gluten Free Flour: as explained above, it’s very important that you’re using a good gluten free flour that you know and trust! If you haven’t used one before and aren’t familiar with gluten free baking, feel free to also use your favorite regular flour 🙂

Plant Based Milk with lemon: this is to create a vegan buttermilk for your chocolate bundt cake! Most traditional bundt cake recipes require either a buttermilk or a sour cream. This way, you still get the same effect while being dairy free!

Vegan Butter OR Nut Butter: truth be told, I actually like the nut butter version better! I think it makes this gluten free bundt cake taste absolutely delicious and gives a little sweet nutty flavor to the chocolate! However, I can’t knock the vegan butter version of this chocolate bundt cake that I made. It’s still extraordinarily delicious! You can’t go wrong either way 🙂

Coconut oil plus water: I say this because most other oils actually have some water content, but coconut oil is pure fat. To ensure that your vegan bundt cake doesn’t turn out dry, just add about one or two tablespoons of warm water to the batter! You can also use a different oil without the water, but I figured since coconut oil has a high smoke point, it’s the best to use here!

Cacao powder: well you can’t have a vegan chocolate bundt cake without chocolate! As I say in all of my chocolate recipes, it’s so important to use a cacao powder that is high quality. This is for flavor and the amazing health benefits you can experience from cacao.

Maple syrup: oh my beloved maple syrup! This vegan bundt cake is actually surprisingly low in sugar because we’re only using a little maple syrup! Maple syrup tastes sweeter than sugar, so you can actually get away with using less. However, if you want to save that syrup for pancakes, feel free to double the ratio for sugar.

Ground chia/flax seed: this part is crucial so that not only does the cake stay together, but that your gluten free flour mix actually acts like a regular flour! You can pick up chia and flax seeds already ground at almost any grocery store!

Oh, and then the final touch of course! Melted chocolate on top! You could also make your own chocolate glaze by mixing together melted coconut oil or vegan butter with cacao and a little maple syrup, but I’m just a huge fan of melted chocolate.

It makes me think of fondu!

One thing I did want to talk about with this chocolate bundt cake is that I love that I’m at a place in my life when I can finally enjoy something as delicious as this gluten free bundt cake, and also enjoy it’s fully gluten counterpart.

It took a while for me to get here. Here as in complete food freedom. But this place that I’m in now, not fearing food anymore, rather celebrating it, for all that it is; it took work getting here. I had a lot of trial and error.

I used to only eat gluten free after a diagnosis that gluten would hurt my system, so this gluten free bundt cake would potentially be within the realm of safe foods. But now, I realize that I allowed that fear of gluten to then churn into other fears.

Fear of grains.

Of fats.

Sugar.

Anything not a plant.

I was deep within an addictive pattern of “clean eating” as a cover up for my eating disorder. Now, I don’t fear gluten, nor grains, fats, sugars, or foods that don’t come directly from the earth.

Description

Ingredients

Scale
  • 3 cups 1:1 gluten free flour (or you can create your own)
  • 2 tbsp ground chia or flax seed
  • 2 cups nut or coconut milk + 1 tbsp lemon juice/white vinegar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 cup cacao powder
  • 2/3 cup maple syrup
  • 1/2 cup vegan butter or almond butter (melted if butter)
  • 1/2 cup coconut oil (melted, + 2 tbsp warm water)
  • 1/2 tsp sea salt
  • 1 tsp vanilla extract

Chocolate drizzle

  • 1 bar your favorite chocolate

Instructions

  1. Preheat oven to 375F and grease a bundt cake pan with coconut oil.
  2. In a large mixing bowl, whisk together flour, cacao powder, baking powder, ground chia/flax seed, baking soda, and sea salt. Set aside.
  3. In a medium mixing bowl, mix together nut/coconut milk, maple syrup, vegan butter/nut butter, coconut oil + water, and vanilla extract.
  4. Slowly pour wet into dry ingredients and mix together.
  5. Pour batter into the bundt pan and place in the oven.
  6. Bake for 40-45 minutes, or until toothpick comes out dry.
  7. When ready to serve, melt bar of chocolate and drizzle on top. Enjoy!
