Nutella-stuffed brownie cookie bars are the new trend in the Banana Diaries kitchen, and I’m so here for it.
Super fudgy vegan brownies layered with the best vegan chocolate chip cookie recipe and all stuffed with a homemade vegan and dairy free Nutella.
Yep, you read that right. This twist on the classic brookie recipe is entirely vegan, not to mention, dairy free, egg free, soy free, and can even be made gluten free!
That being said, if you do not follow labels or are hesitant to try a vegan dessert, don’t be! My boyfriend’s 94-year-old grandma absolutely loved these brookie bars.
And let me tell you, she is honest when she doesn’t like something! When you get the stamp of approval from Mimi, it’s a good day!
How to make vegan Nutella stuffed brownie cookie bars (brookies)
As mentioned above, this Nutella brownie cookie bars recipe is a combination of three of my favorite recipes on the blog.
Brownies, cookies, and Nutella!
These vegan brookie bars are truly the ultimate form of decadence. And everything is so incredibly easy- you can even use the same bowl that you used for the brownie batter for the cookie dough as well!
I recommend making the vegan Nutella first. Then, we’ll make the brownie batter, and finally the cookie dough!
Vegan Fudgy Brownie Layer
This is essentially my favorite vegan brownies on the blog. These fudgy brownies are entirely dairy free and can easily be made gluten free by using gluten free 1:1 baking flour.
The one thing to keep in mind is that the brownie batter is very thick– so don’t fret if it seems more like “dough” than batter. Simply use a rubber spatula to gently spread the brownie batter to touch the edges of the pan. This actually works in our favor because then it will be easier to spread the Nutella on next!
Vegan Nutella Layer
I have a whole video on YouTube on how to easily make this creamy and sweet vegan Nutella that tastes better than store-bought! Trust me, you’ll want to eat this with a spoon- but don’t just yet, because we need it for these Nutella stuffed brownie cookie bars!
All you need is 5 minutes and 4 ingredients for this chocolate hazelnut spread.

And finally, once the Nutella is spread over the brownie layer, we’ll make the vegan chocolate chip cookie dough! Once again, this is based off of my classic vegan chocolate chip cookies. It’s so delicious and decadent, they taste like regular cookies!
Once the dough is made- no need to even chill! We’ll just get these brownie cookie bars into the oven to bake!
After they’ve baked, allow the Nutella stuffed brownie cookie bars to cool in the pan for 10 minutes. Don’t worry- the Nutella will still be melty and gooey in side when you slice into them!
Trust me, you won’t be able to stop eating these secretly vegan brownie cookie bars! They’re the ultimate form of indulgence and the perfect baking activity for your weekend.

Description
These easy vegan brownie cookie bars stuffed with dairy free Nutella are the epitome of decadence! Full of super rich and creamy homemade Nutella, these brookies are a wonderful indulgent vegan dessert!
Ingredients
- 1 batch vegan chocolate chip cookie dough
- 1 batch vegan brownie batter
- 1 batch vegan Nutella
Instructions
- Preheat the oven to 350F, and line an 8×8 baking pan with parchment paper.
- Prepare the brownie batter first. In a large bowl, combine the flaxseed and the water, and allow the mixture to sit for 5 minutes. After 5 minutes, add in the melted vegan butter or coconut oil, coconut sugar, and melted chocolate chips. Stir with a spoon until the mixture is completely combined. Sift in the flour, cacao powder, and baking powder, and use a rubber spatula to gently fold the dry ingredients into the wet ingredients. Be sure not to over-mix- the batter should be just mixed. Add in the remaining chocolate chips, and gently fold to distribute (being careful not to over-mix).Pour the batter into the pan and spread the brownie batter to touch the edges of the pan.
- Spoon the Nutella over the brownie batter and make sure it reaches the edges of the pan. Set aside.
- Prepare the cookie dough. In a large bowl, add softened coconut oil, applesauce, coconut sugar, and vanilla. Use a hand mixer to beat the wet ingredients together until completely combined. Add in dry ingredients to wet and mix with a spoon. Add in dairy free milk by the tablespoon until batter is a sticky consistency, but not pourable. Fold in chocolate chips.
- Spoon the cookie dough over the Nutella layer. Use the back of a spoon or clean hands to gently press the dough flat to cover any spots of Nutella.
- Place the bars into the oven to bake for 30 minutes, or until the toothpick doesn’t show any crumbs.
- Remove from the oven and allow the brownie cookie bars to cool in the pan for 10 minutes before slicing.
- Enjoy!

Just made these !! They taste so good, I made had batches of all three batters (cookie & brownie & Nutella) and I still made 16 cookie brownie bites – came to aprund 241 calories per bite – tastes amazing – not sickly sweet but perfect as you wouldn’t be dying to grab another as tempting as it is! I would say for the cookie dough – using coconut oil definitely gives it a very coconut taste so maybe substitute for vegan butter instead. And I would leave them to cool for longer before cutting so they don’t crumble !
