How to make Crispy Roasted Sweet Potatoes in the Oven (EASY!)
These crispy roasted sweet potatoes are so easy and simple to make, you won’t want them any other way! Ready in just 30 minutes in the oven for the perfect flavorful side dish to any meal!

I don’t know about you, but I could basically live off sweet potatoes. They’re the perfect vegetable in my eyes, and totally count as a complete meal of just potatoes (but I guess to the average human, they see them as a side dish- a delicious one too!).
These crispy roasted sweet potatoes taste like they come from a restaurant (which is what we want, right??).
They’re tender and caramelized in the center with a soft texture yet a crisp outer shell, and perfect as a side dish or to incorporate into another recipe, like this roasted sweet potato lentil salad. This is one of my absolute favorite sweet potato recipes, and I know it’s going to be yours too.
They’re just so versatile and easy to serve with anything (and nearly as easy as just baking a sweet potato whole!). Plus, these sweet potatoes make a great simple yet flavor packed holiday side dish at Thanksgiving or Christmas! But to be honest, my husband and I make these several times throughout the week any time of year, so don’t just save them for the winter months!

- Easy to make: You only need a few simple ingredients (sweet potatoes, herbs, vegan butter or oil, and sea salt) and a knife and cutting board. Plus you can make them perfectly crispy in just an oven!

Which sweet potato variety is best?
You can use your favorite here! I personally prefer jewel or garnet sweet potatoes for that lovely sweet and honey-like flavor.
How to cube sweet potatoes:
This part is easier than it looks! I recommend using a cutting board and a large yet thin knife. The thinner the knife, the easier it is to slice the sweet potatoes. You can also use a serrated knife.



What pan should I use to make crispy roasted sweet potatoes?
I love to make these roasted sweet potatoes in my Dutch oven or in a cast iron skillet as well. You can also make them on a baking sheet lined with parchment paper! The parchment paper is crucial to help crisp up the sweet potatoes.
The Dutch oven is nice in that I like to sometimes cover the sweet potatoes for the first 20 or so minutes of baking to really make soft and caramelized centers.
Do I need to peel sweet potatoes before baking them?
No, you don’t need to peel the sweet potatoes before baking. If you want, you can slice off any imperfect pieces, but it’s safe to eat sweet potato skin (and I think it helps to add to their crispiness!).

Seasoning & Flavor Variations
If you want to switch up the simple seasoning found down below in the recipe card, here are a few different spice variations to sprinkle and toss onto your sweet potatoes:
- Italian-inspired: even more than what we already have, add 1 tbsp Italian seasoning + 1 tbsp chopped basil + finish with a drizzle of extra virgin olive oil after baking
- Thai-inspired: 1 tbsp chopped Thai basil + juice from 1 lime + 1 serving of this easy vegan peanut sauce
- BBQ: 2 tsp chili powder + 1 tsp cumin + 1 tsp smoked paprika + 1 tsp onion powder + 1 tsp garlic powder + sea salt/pepper + this vegan BBQ sauce for dipping
- Soy-Ginger: 2 tsp ground ginger + 1 tbsp soy sauce or Tamari sauce + 1 tsp dijon mustard
- Cheesy: Same seasonings as listed below + 3-4 tbsp vegan parmesan
Can I make these roasted sweet potatoes in the air fryer or toaster oven?
Absolutely! I love to use my toaster oven to bake these sweet potatoes when my oven is too crowded (usually around the holidays). You can also easily make them in an air fryer as well and bake according to your air fryer’s instructions.

How long to bake crispy sweet potatoes?
You only need 30-35 minutes at 425F to bake these sweet potatoes until they’re crispy and perfectly roasted!
Can I eat sweet potatoes that have sprouted?
If your sweet potatoes have sprouted before you’ve baked them, yes, you can still eat them BUT you’ll need to remove the sprouts. Check out this full article here for how to remove sprouts from sprouted sweet potatoes.
What to serve with roasted sweet potatoes:
The best part about sweet potatoes is that they go so well with everything. You can keep these crispy sweet potatoes simple with just the seasoning they have on or pair with some ketchup for dipping.
Or you could dress them up with a fun sauce, like this yogurt dill dipping sauce or vegan pesto! They also taste REALLY good in this 5 minute BBQ sauce.
Serve these roasted sweet potatoes alongside your favorite vegan main dish, like these easy vegan scallops or as a side to this vegan chickpea tuna salad or these creamy garlicky tomato butter beans!
They’re also great in vegan tacos as well or keep it even simpler, and just make some baked crispy tofu too.

Description

Ingredients
- 2–3 medium sweet potatoes
- 2–3 tbsp vegan butter, melted
- 1 tbsp parsley
- Sea salt + pepper to taste
- Optional: 1 tsp onion powder, 1 tsp garlic powder
Instructions
- Prep: Preheat the oven to 425F, and line a sheet pan or baking sheet with parchment paper. Alternatively, you can grease a Dutch oven or cast iron skillet.
- Wash: Scrub and rinse the sweet potatoes well, and remove any dirty spots that won’t come clean.
- Slice: Slice one sweet potato in half with a long thin knife or serrated knife on a cutting board. Then slice 1″ rounds from one half of the sweet potato. Next, take one round and slice it into cubes. Repeat for the remaining sweet potato coins, and then again for the remaining sweet potato.
- Season: Place the sweet potato cubes onto your prepared pan and season with the melted vegan butter, parsley, sea salt, and pepper. Toss lightly to coat evenly.
- Bake: Place the sheet pan into the oven on the middle or high oven rack, and bake for 30 minutes, or until crispy.
