Healthy Herbed Potato Salad

This easy and healthy herbed potato salad is perfect for your barbecue or party get together! Completely vegan and dairy free, no one will know it’s healthy!

Potato salad has got to be one of my absolute favorite side dishes at a barbecue. When all the food is set on the table…I’m not diving for the green salad nor the veggie skewers, not even the rolls.

I’m here for the potato salad, people.

Now, this is not your traditional potato salad…but it’s even better, and it’s the only thing I’ll be needing at any summer get together!

Okay, so I’ll have a few other dishes haha (see alllll the way below before the recipe), but this herbed potato salad definitely wins my heart over!

And guess what? It’s undetectably dairy free, vegan, nut free, and packed with healthy ingredients! Yep, I am a magician, and you’re about to learn some magic for yourself!

How is this potato salad dairy free?

Have you ever had a dairy free potato salad and were super disappointed?

Yeah, me too. It ain’t fun.

Luckily, you’re not going to have that experience again with this potato salad! I have the backing of traditional American diet eaters as well, so you know it’s good!

The trick to making this healthy potato salad dairy free is…avocado! Mixed with a bunch of delicious herbs!

Trust me, this dairy free potato salad won’t taste dairy free, and it won’t taste like avocado. It will just taste like a refreshing and light potato salad that’s jam packed with flavor!

Not a bad compromise right?

Healthy potato salad ingredients

Baby potatoes: I personally love the rainbow baby potatoes- I think they’re so cute and perfect for this dish! Just buy a pound at your local farmer’s market or grocery store (or two pounds…this recipe is very scalable!), and you’ll be set!

Avocado: now for the avocado, we want a really ripe avocado! It can still be a little firm, but too firm won’t work, because we’re going to be using the avocado basically as a replacement for the mayo. Check out this guide here for determining how ripe your avocado is. Your avocado should be soft to touch and the stem should easily fall off.

Olive oil: a good olive oil goes a long way, I always say! Olive oil is also such a great fat and has so many benefits to it, there’s no need to skimp on a good macronutrient! I know a lot of times people associate “healthy” with being “low fat,” but it doesn’t necessarily have to be low fat in order to be healthy. This potato is packed with vibrant nutrients, and we’re using two whole fat sources here!

Basil: that’s right! This is sort of like a pesto herbed potato salad! How cool, right? I just think pesto goes with everything, so we’re making a variation of a dairy free pesto without nuts too! This one is just extra creamy, thanks to the avocado!

Parsley: such an underrated herb, parsley pairs so well with basil! In fact, when I made this vegan potato salad, I was getting compliments all around at the combination of the two (not to toot my own horn or anything ha! Sorry!!). Definitely don’t omit this guy!

Lemon: now you definitely need to be careful on how much lemon you use, so follow the directions below and measure it out! Too much lemon, and your healthy potato salad will be too acidic, not enough, and there won’t be enough flavor!

Garlic: such a wonderful flavor, I promise the garlic won’t be overpowering here! I think a lot of people shy away from the garlic, but it totally boosts this vegan dairy free potato salad to the next level!

How to make a vegan potato salad that tastes great

It’s all in the herbs and spices. Food on its own is great, don’t get me wrong, but some foods are a little more bland than others. Take for instance the potato!

With a traditional potato salad, you’d be adding a lot of herbs and spices to the creamy mayo, correct? Well, the same is true for this light and healthy green potato salad! Making sure you’re adding enough herbs, and the right ratios of each, is key.

The combination of basil, parsley, and garlic is so crucial here! This really drives home all of the yummy flavors that one associates with potato salad, and when paired avocado, you get that creamy texture that people are most accustomed to with a potato salad!

But how do you get a smooth and creamy healthy vegan potato salad? Let me introduce you to my handy dandy…food processor!

I know I talk about this little machine in almost every post, but it truly is my favorite cooking tool! This is what I use to blend all of the herbs together, as well as make the avocado extra smooth and creamy!

Start by getting your potatoes prepped for roasting: slice and dice them, toss with olive oil (don’t skimp on this, people!) and sea salt, and roast them on a baking sheet in the oven.

Then bring out your food processor and puree the avocado. It should look very whipped and creamy, but it doesn’t necessarily have to be completely smooth all the way. Oh, and you’re going to need a ripe avocado for this- none of those solid rocks they call avocados here please!

Add in the rest of your sauce ingredients: parsley, basil, olive oil, lemon, garlic, sea salt, and some pepper. Blend again until smooth (it’s okay for the herbs to not be completely minced!). Then store in the fridge until you’re ready to toss your potatoes with the sauce!

When the potatoes are cool enough (about 15 minutes after roasting), toss together the potatoes and sauce in a large bowl, and serve warm or cool! Whatever you’d like!

Healthy Herbed Potato Salad


Description

Ingredients

  • 1 lb organic baby poatoes
  • 1/2 cup olive oil, divided
  • 1 large ripe avocado
  • 1/2 cup chopped basil
  • 1 tbsp parsley
  • 2 cloves garlic, minced
  • 2 tbsp lemon juice
  • 1 tsp sea salt
  • pinch black pepper

Instructions

  1. Preheat oven to 375F and line a baking sheet with parchment paper.
  2. Wash and dice baby potatoes.
  3. Toss them in 1/4 cup olive oil and a pinch of sea salt.
  4. Roast baby potatoes on parchment paper for 45 minutes or until completely roasted.
  5. While the potatoes are roasting, puree avocado in a large food processor.
  6. Add in basil, parsley, garlic, the rest of the olive oil, lemon juice, and pepper.
  7. Blend until creamy.
  8. Once potatoes are roasted, toss potatoes in a large bowl with the avocado pesto sauce.
  9. Serve warm or cold!
