I just love all things strawberry in the summer, but I’ll be honest, I’m not a huge alcohol fan. I’d much rather have a fun drink without the alcohol because I feel it’s way more refreshing in the heat.

So I was scouring the inter webs for a good and healthy mocktail recipe with no luck! They all seemed too complicated.

First you have to make the syrup. Then you have to strain it. Then there’s a blender.

Too much of a production!

So I set out to come up with an easy and healthy mocktail recipe that both kids and adults can enjoy πŸ™‚ And the results?

Incredible! You’re going to be making this all summer long, it’s so refreshing and light!

Ingredients for Virgin Strawberry Margaritas

Strawberries: yes, this healthy mocktail recipe focuses on fresh fruit! Since strawberries are in season, I say go for the fresh fruit! It will be cheaper as well when purchasing in a grocery store, or you could even go strawberry picking, which is one of my favorite summertime activities πŸ™‚ Great for kids and adults alike!

Lime: I normally am not a huge fan of lime, but I really enjoy it in this recipe. It adds a nice freshness to the overall taste of this easy virgin margarita. What I really love is pairing it with lime seltzer instead of just plain seltzer, but feel free to use whatever you’d like! You could even get a strawberry seltzer of do some club soda if you’re not following a strictly Paleo diet!

Maple syrup: now, this one is completely optional. I’ll be honest, I think it tastes great without the maple syrup, but I also don’t like a whole bunch of sweetness in my drinks. However, I recognize that some people do, so feel free to add in a touch here! It won’t taste like maple syrup, but it will give a nice sweetness to it without throwing in an additional flavor component! You can also use coconut sugar if you’d like, or regular sugar if you’re not Paleo!

Seltzer: okay so truth be told, I’m not a seltzer fan on its own either. I don’t know why, but the bubbles I feel like give it a weird taste if I were just sipping it on its own! However, mixed in with the strawberry and lime, this healthy mocktail recipe totally gets elevated to the next level. It tastes like drinking a frozen strawberry lime soda! Really yummy and refreshing since this is alcohol free!

Ice: crushed ice will work perfectly here! You can also blend the ice with the strawberries to create a frozen virgin margarita here too!

What makes these Paleo friendly?

These strawberry margaritas are not only so easy to make, but they actually only focus on the natural sweetness of the strawberries!

Yep, the maple syrup is completely optional. I personally love this virgin strawberry margarita recipe without maple syrup. I think the strawberry puree is full of natural sweetness since strawberries are very in season right now!

However, I know people prefer to have their summer cocktails (or mocktails) on the sweeter side, which is why I added a paleo friendly option (which I’ve tried, and tastes just as amazing πŸ™‚ ).

Just add a little maple syrup, and you have a delicious, Paleo friendly, and easy virgin margarita!

Of course, you can absolutely add in regular sugar if you’d like! Don’t feel like you need to follow a certain label when making this recipe, I just craft them this way so that people of all different ways of living healthy can enjoy!

This healthy mocktail recipe is very customizable πŸ™‚

How to make a strawberry margarita

Now that we’ve gone over the basics, let’s get into how to actually make this easy virgin margarita!

It starts with boiling the strawberries in a little bit of water before turning them into a puree. This will take about 15 minutes.

Next, you puree your strawberries and then place the puree into the fridge to cool for about an hour. This will also help to make your strawberries into more of a syrup, however, we’re not going to strain the puree!

When you’re ready to set up your virgin strawberry margarita drink making station, grab 4 glasses with some crushed ice. Add in a little strawberry puree, some lime juice, maple syrup if you’d like, and then top with either seltzer or lime flavored seltzer.
