I don’t know about you, but I was absolutely one of those kids who was sneaking bites of cookie dough behind my mom’s back. I love cookie dough, sometimes even more so than cookies (although I really love my ultimate vegan chocolate chip cookies!).

So of course, I had to recreate one of my favorite childhood treats in the form of vegan single serving cookie dough.
But this isn’t just any cookie dough that you might find on the inter webs.
It’s actually packed with protein, low in sugar, naturally gluten free, and nut free! Plus, you get to eat alllllll this cookie dough for yourself. Yes, this is cookie dough for one!

The Best Healthy Cookie Dough Recipe
So I’m super pumped about this recipe in particular because I teamed up with two of my other food blogger friends, Natalie from Feasting on Fruit and Sonya from Sonya’s Open Cupboard.
We all decided that we were going to stick with the theme of cookie dough and make a vegan cookie dough series of sorts.

So I decided to make a vegan protein cookie dough packed with fun rainbow sprinkles and chocolate chips. It basically tastes like an edible funfetti cookie dough, but lower in sugar and packed with plant based protein (I’m serious, 12 grams per serving! That’s pretty decent for cookie dough!).

Ingredients for making edible cookie dough for one
Now, my recipe for healthy cookie dough is actually single serve. Yes, you can eat this entire jar! Sometimes, you just want the cookie dough all to yourself (actually, probably all of the time…just me?).
So you really won’t need much in quantity of each ingredient for this protein cookie dough recipe:
- Oat flour or gluten free 1-to-1 flour (you can also use all purpose or cassava flour, but please make sure to toast the flour before making this recipe!)
- Pea protein powder
- Vegan butter or coconut oil
- Coconut sugar
- Vanilla extract
- Dairy free milk
- Sprinkles, chocolate chips, and any add-ins that you’d like!
That’s it!

How to make edible healthy cookie dough for one
If you’re in need of a quick sweet snack or a healthy vegan dessert for after dinner, this is your recipe. All you need is 5 minutes (plus 5 minutes to toast the flour beforehand- please do not skip this step!), and you’re ready to go!
Not even any chilling time- I promise! Start by mixing together the softened vegan butter, coconut sugar, and vanilla extract.

Then add in the flour and pea protein, and stir to combine. You can add in the dairy free milk here to help mix the dry ingredients into the wet.
Fold in the add ins, such as sprinkles and chocolate chips, and dig in!

Do I need to toast flour for raw edible cookie dough?
Yes! With regular cookie dough (although all cookie dough that you’ll find on this blog is vegan), it’s not just the eggs that pose as an issue for consumption raw.

It’s the flour as well. In order to ensure that your healthy cookie dough is safe to eat, please make sure that you don’t skip the step where I walk you through toasting the flour down below in the recipe card.

Optional add-ins for your edible cookie dough:
Of course, you don’t have to be limited to just sprinkles and/or chocolate chips: the cookie dough world is your oyster!
- Nuts or seeds
- Chopped up homemade almond butter cups
- Dried fruit, such as dried strawberries, cherries, bananas, mango
- Crushed gluten free pretzels
- Vegan candy coated chocolate gems
- Vegan marshmallows
- Lemon, orange, or lime zest
- Vegan nutella

Ingredients
- 2 tbsp vegan butter or coconut oil, softened
- 1 1/2 tbsp coconut sugar
- 1/2 tsp vanilla extract
- 2 tbsp dairy free milk
- 1/4 cup gluten free 1-to-1 flour or oat flour
- 1 tbsp pea protein
- 1 tbsp vegan sprinkles
- 1 tbsp chocolate chips
Instructions
- Preheat the oven to 350F and line a baking sheet with parchment paper. Add the flour to the pan and toast for 5 minutes.
- Remove from the oven and let cool completely before using in the recipe.
- In a medium bowl, use a fork to mix together the softened butter, coconut sugar, and vanilla extract. Keep stirring until it’s completely combined.
- Add in the flour and pea protein, and use a spoon to fold into the wet ingredients. Add in the dairy-free milk here, 1 tablespoon at a time and mix in between until the dough is sticky, combined, and thick.
- Fold in the sprinkles and chocolate chips until evenly distributed.
- Enjoy! Any leftovers, store in an airtight container in the fridge for up to a week, or up to a month in the freezer.

*You can also use all purpose flour or cassava flour here as well in equal increments. Just make sure to properly toast the flour before beginning!

What type of pea protein do you use?
Hi Ruth! I used Terrasoul unflavored pea protein for this recipe- you don’t taste it one bit! However, you can also used a flavored vanilla pea protein, such as Nuzest. Either will work, but I find that Terrasoul is great if you don’t want to really notice the flavor of pea protein (so then it just tastes like cookie dough! 🙂
I made this without protein powder (didn’t have any one hand) but OMG!!! This is the perfect dessert. Hits that sweet tooth and incredibly quick and easy to make. Can not recommend enough

Made this tonight and wow, it’s dangerous! Ha! I used granulated monk fruit sweetener in place of the coconut sugar and also used gluten free kodiak pancake flour mix for the gluten free flour (also dairy free.) And to comment on the pea protein…I use unflavored pure pea protein from Trader Joe’s and it’s amazing! I add it to so many things because you truly can’t taste it. Pea protein gets a bad rap and I now swear it’s because flavored (ie vanilla or chocolate) really wrecks it. Anyway, my husband stole half of this cookie dough from me! ðŸ˜ðŸ˜† Very good!
