The best part about this gluten free cookie dough? It tastes just like a classic with all the flavor and sweetness of edible cookie dough. You’ll never know this cookie dough is vegan!
Ingredients for making edible cookie dough for one
Now, my recipe for vegan cookie dough is actually single serve. Yes, you can eat this entire jar! Sometimes, you just want the cookie dough all to yourself (actually, probably all of the time…just me?).
So you really won’t need much in quantity of each ingredient for this protein cookie dough recipe:
- Oat flour or gluten free 1-to-1 flour: you can also use all purpose, but please make sure to toast the flour before making this recipe!
- Vegan butter or coconut oil: I recommend Flora Plant Butter for the best flavor. It’s naturally nut free and soy free.
- Coconut sugar: you can also used granulated sugar if you don’t have coconut sugar on hand.
- Vanilla extract or vanilla powder: for a really lovely flavor, use vanilla powder!
- Dairy free milk
- Vegan chocolate chips: I recommend Enjoy Life or Valrhona.

How to make edible single serve vegan cookie dough for one
If you’re in need of a quick sweet snack or a vegan dessert for after dinner, this is your recipe. All you need is 5 minutes (plus 5 minutes to toast the flour beforehand- please do not skip this step!), and you’re ready to go!
Not even any chilling time- I promise!
- Start by whisking together the melted vegan butter, coconut sugar, and vanilla extract.
- Then add in the flour and pea protein, and stir to combine. You can add in the dairy free milk here to help mix the dry ingredients into the wet.
- Fold in the add ins, such as sprinkles and chocolate chips, and dig in!




Is it okay to eat gluten free flour raw?
Unfortunately, whether it’s gluten free or not, I recommend heat treating the flour. It’s super easy though, and just takes an extra few minutes! With regular cookie dough (although all cookie dough that you’ll find on this blog is vegan), it’s not just the eggs that pose as an issue for consumption raw.
It’s the flour as well. In order to ensure that your edible single serve cookie dough is safe to eat, please make sure that you don’t skip the step where I walk you through toasting the flour down below in the recipe card.

Description
This super easy single serve edible cookie dough is unbelievably vegan and dairy-free, and absolutely satisfies any cookie dough cravings in a pinch!
Ingredients
- 2 tbsp (30 grams) vegan butter, melted
- 1 1/2 tbsp (17 grams) coconut sugar
- 1/2 tsp vanilla extract or 1/4 tsp vanilla powder
- 1/4 cup (34 grams) gluten free 1-to-1 flour or oat flour
- 1 tbsp vegan chocolate chips*
- Optional: 1 tbsp dairy free milk to help combine the flour, optional add-ins, such as sprinkles
Instructions
- Heat treat the flour: Preheat the oven to 350F and line a baking sheet with parchment paper. Add the flour to the pan and toast for 5 minutes. Remove from the oven and let cool completely before using in the recipe.
- Make the cookie dough: In a medium bowl, use a whisk to mix together the melted vegan butter, coconut sugar, and vanilla extract. Add in the flour, and use a whisk to mix into the wet ingredients. Add in the dairy-free milk here if needed, 1 tablespoon at a time, and mix until the dough is sticky, combined, and thick. Fold in the chocolate chips, and optional add-ins, until evenly distributed.
- Serve! Enjoy! Any leftovers, store in an airtight container in the fridge for up to a week, or up to a month in the freezer.
Notes
Flour: You can also use all purpose flour here as well in equal increments. Just make sure to properly toast the flour before beginning!
Vegan Chocolate Chips: I recommend Pascha Organics. They have both 100% chocolate, stevia sweetened, and regular vegan chocolate!
Multiple servings: use the servings calculator at the top of the recipe card to double or triple the recipe servings.


What type of pea protein do you use?
Hi Ruth! I used Terrasoul unflavored pea protein for this recipe- you don’t taste it one bit! However, you can also used a flavored vanilla pea protein, such as Nuzest. Either will work, but I find that Terrasoul is great if you don’t want to really notice the flavor of pea protein (so then it just tastes like cookie dough! 🙂
I made this without protein powder (didn’t have any one hand) but OMG!!! This is the perfect dessert. Hits that sweet tooth and incredibly quick and easy to make. Can not recommend enough

Made this tonight and wow, it’s dangerous! Ha! I used granulated monk fruit sweetener in place of the coconut sugar and also used gluten free kodiak pancake flour mix for the gluten free flour (also dairy free.) And to comment on the pea protein…I use unflavored pure pea protein from Trader Joe’s and it’s amazing! I add it to so many things because you truly can’t taste it. Pea protein gets a bad rap and I now swear it’s because flavored (ie vanilla or chocolate) really wrecks it. Anyway, my husband stole half of this cookie dough from me! 😭😆 Very good!
