Would you believe me if I said you could have fudgy and rich almond butter cups that are decadently delicious, yet completely Paleo, gluten free, keto, vegan, and sugar free?

Oh….and technically Whole30 compliant?

Well, you better because these Paleo almond butter cups are for real.

Using a 100% dark chocolate (or if that’s too bitter for you- a warning, it is bitter if you’re not used to it!) and pure almond butter, these vegan and Keto almond butter cups are the easiest dessert to make when you’re in need of something chocolatey.

Basically, these cups will get you chocolate wasted in the best way.

Oh, and they’re perfect for meal prep (because yes, I meal prep dessert! My priority is sweets, people!)!

How to make Paleo almond butter cups

These Paleo vegan almond butter cups come together in a jiffy, and you only need two ingredients.

Yep, just two!

Don’t believe me? Take a look:

  • 100% chocolate
  • Almond butter

That’s it! Now you’re probably thinking, okay great but where do I get 100% chocolate or chocolate chips? I like to use Pascha Organics, but there’s also a brand at Trader Joe’s, and a few others on the market.

But is it bitter?

Well, yes 100% dark chocolate is bitter, so if you can’t take the strength of 100% dark chocolate, you can cut it with your favorite Paleo friendly vegan chocolate, like Enjoy Life! Or Lily’s Sweets, which makes some stevia-sweetened chocolate.

Or you can add in about 1/4 cup stevia to the melted chocolate- whatever floats your boat!

The other note you need to watch out for is making sure that your almond butter is either single ingredient (just almonds) or two ingredients (almonds and sea salt). This will ensure that if you’re following the Keto or Paleo diets, you’re meeting any necessary standards for these vegan almond butter cups.

Now to making these almond butter cups:

  1. Line a 12-tin mini cupcake tin with mini cupcake liners.
  2. Melt the chocolate either via stovetop or in the microwave until smooth. If using the microwave, heat the chocolate for 30 seconds, stir, then heat for another 15 seconds and then stir until completely melted.
  3. Spoon about 1 teaspoon of chocolate into each cup, pushing the chocolate up the sides of the cupcake liners to create a little bowl.
  4. Place the cupcake tin into the freezer to set the chocolate for 10 minutes.
  5. Remove the tin from the freezer and spoon about 1/2 teaspoon of almond butter into the middle of each cup. Place the cupcake tin back into the freezer for 10 minutes to set.
  6. Remove the tin once more from the freezer, and top with the remaining chocolate. If you need to heat the chocolate again, you can microwave it for 10-15 seconds, being careful not to burn the chocolate.
  7. Place the cupcake tin back into the freezer to set for 5 minutes.
  8. Top with optional sea salt and enjoy!

That’s it! It really just comes down to a bit of patience going back and forth between the freezer, but these keto almond butter cups are so easy, you’re going to be making them and meal prepping them all the time!

My almond butter layer shows through in the middle- what gives?

You need to make sure that you’re pushing the chocolate up the sides of the cupcake liners. This helps to give that feel of a traditional nut butter that you might find in a store! Only made with higher quality and simpler ingredients 🙂

Can I have almond butter on keto?

Yes, you can! Most nut butters you can have while following the Keto diet, but only if there isn’t any added sugar.

Just be aware of that ingredient list!

Can you melt almond butter?

Yes, you can, but for these Paleo vegan almond butter cups, there’s no need to melt the almond butter 🙂 You’ll just be sticking a dollop of almond butter into the middle of each cup, no microwaving necessary!

Is chocolate Paleo? Keto? Vegan?

The right kind is! I always recommend Pascha Organics, Lily’s Sweets, and Enjoy Life as my go-to chocolate brands.

Pascha Organics has 100% dark chocolate chips, which is pure chocolate and contains zero milk, sugar, or soy.
