Oatmeal Cookie Bar Ingredients
You’ll only need a few simple ingredients to make these oatmeal chocolate chip bars:
- Rolled oats: use gluten free if needed.
- Flour: you can use all-purpose, gluten-free 1:1 baking flour, or even oat flour! See the below sections for recommendations, including in the recipe card.
- Leavening agents
- Vegan butter: you can use coconut oil, but these vegan cookie bars taste best with vegan butter. I recommend Flora Plant Butter.
- Unsweetened applesauce: this will replace the egg yolks.
- Maple syrup: these vegan oatmeal cookie bars are entirely refined sugar free as well!
- Chocolate chips: I recommend Pascha Organics for a completely vegan, dairy-free, AND fair trade chocolate. They have 100% dark chocolate, 85%, vegan milk chocolate, and even stevia sweetened!
How to make healthy oatmeal chocolate chip bars (overview)

Here, we’ll go over a brief overview of the steps, along with providing visuals for a better understanding of the recipe.
To start, I recommend measuring out all ingredients before beginning, and reading through the instructions. Though these oatmeal chocolate chip bars are super easy, it’s always a good idea to read through a recipe before beginning.
It’s also important that your vegan butter is room temperature, along with the maple syrup and the applesauce. Otherwise, the wet ingredients won’t be able to combine properly, leaving potentially dry oatmeal cookie bars. Not fun!
Once you have all of your ingredients, these vegan oatmeal cookie bars can be made in a few simple steps:
- Whisk together the dry ingredients.
- Cream together the wet ingredients.
- Fold the dry ingredients into the wet, and stir in the chocolate chips.
- Press the dough into a baking pan and top with additional chocolate chips.
- Bake the cookie bars!
- Slice and serve!
Can I make these oatmeal cookie bars gluten free?
You can easily make these super simple oatmeal cookie bars gluten free as well. As I mentioned above, you can use either gluten free 1:1 baking flour or oat flour. I’ve tested both options, and I honestly love the oat flour version. I make my own oat flour, so these bars are super oaty and delicious!
For the gluten free 1:1 baking flour, you can swap in the same amount that you would use for all-purpose flour. However, with the oat flour, you’ll actually use a bit more, and add in a touch of arrowroot powder (or starch).

To jazz up these easy vegan cookie bars, try adding in a few of these awesome mix-ins:
- Vegan white chocolate chips (I recommend Pascha Chocolate!)
- Candied pecans (if you’re nut free)
- Dried cranberries or cherries
- Cinnamon + nutmeg
- Freeze dried strawberries
- Vegan salted caramel
- Homemade vegan Nutella

Ingredients
- 160 grams rolled oats
- 160 grams all-purpose flour (see note for gluten-free oat flour version)
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp sea salt
- 150 grams unsweetened applesauce, room temperature
- 120 grams maple syrup, room temperature
- 113 grams vegan butter, room temperature
- 1 tsp vanilla extract
- 1 1/2 cups chocolate chips
Instructions
- Preheat the oven to 350F, and line an 8×8 baking pan with parchment paper and oil.
- Measure out all ingredients before beginning.
- Whisk the dry ingredients: in a medium bowl, whisk together the oat flour, rolled oats, arrowroot starch, baking powder, baking soda, and sea salt. Set aside.
- Mix the wet ingredients: in a large bowl, cream together the vegan butter and maple syrup, about 2-3 minutes. Then add in the applesauce and vanilla extract and mix again.
- Fold in the dry ingredients: add the dry ingredients to the wet and use a rubber spatula to gently fold together. The mixture will be very thick like a dough. If needed, you can add an additional 2 tbsp of dairy free milk. Then fold in the chocolate chips.
- Bake the cookie bars: press the dough into the baking pan and bake the oatmeal bars for 25-27 minutes, or until a toothpick comes out clean. Remove from the oven, and allow the cookie bars to cool in the pan for 10 minutes.
- Slice and serve: slice and serve the oatmeal cookie bars with a sprinkle of sea salt. Enjoy!
Notes
Gluten free oat flour: instead of using 160 grams all-purpose flour, replace with 170 grams oat flour + 1 tbsp arrowroot starch.

Mine came out crumbly but I forgot to add a tablespoon of starch to my oat flour, so maybe that’s why? Either way, it’s amazing and I’ve made it 3 times in the last month lol even when it’s crumbly my husband and I just scoop it out with a spoon, our new favorite!!!

Hi Emily! I’m not sure how that would impact the taste and texture of the bars- you could try subbing out 2 tbsp of the flour for the protein powder, but I can’t guarantee anything!
