Paleo Chocolate Chip Cookie Dough Truffles Ingredients
Coconut flour: to make these Paleo cookie dough truffles that are completely grain free, we’re using coconut flour! It’s a really light flour and is perfect for eating these truffle bites completely raw. When you use regular flour, you often have to pre-bake it as to kill off bacteria. With coconut flour, you can eat it just as is! You can also sub in almond flour if you’d like, but I prefer to use coconut flour, as this will help to keep these Paleo chocolate chip cookie dough truffles completely nut free!
Coconut cream: how to make these vegan cookie dough truffles? Use coconut cream! This helps to make these cookie bites completely dairy free. You can use coconut milk here as well (full fat) if you can’t find coconut cream- I often find both at my local Trader Joe’s! I just recommend not subbing in the refrigerated kind of coconut milk because I find it’s too watered down and will not lead to rich Paleo cookie dough truffles, like its more traditional counterparts.
Maple syrup: my all time favorite sweetener 🙂 Don’t worry, your cookie dough bites won’t taste like a maple candy if you use syrup! It helps to keep these gluten free cookie dough truffles completely refined sugar free 🙂 And, I personally believe it adds to the texture! However, if you don’t have maple syrup on hand, feel free to use coconut sugar (just add about 1/2 cup instead of a 1/3)!
Coconut butter: this is the key right here- melted coconut butter! I love how coconut butter acts as a standard butter, yet is completely vegan, dairy free, gluten free, and Paleo! It’s essentially just pureed coconut flakes at a really high speed! Nothing else! Make sure your coconut butter is slightly melted. You can do this by heating it in the microwave for 30 second intervals or sticking it in an oven at 300F for about 5 minutes (keeping an eye on it so your coconut butter doesn’t burn!).
Vanilla: to make your Paleo cookie dough truffles taste like real cookie dough 😉
Chocolate: for this recipe, you’ll need chocolate chips and/or chocolate bars! Definitely use chocolate chips for the cookie dough part, but for the melted chocolate coating, it’s up to you! Whatever is easiest. I used a chocolate bar because I didn’t have enough chips, but you could also swap in about 1 cup extra of chocolate chips!
How to make gluten free cookie dough truffles
I’ll be honest, Paleo gluten free cookie dough truffles sound pretty complex and fancy.
But that’s the beauty of them- they sound all fancy, but they’re actually quite easy to make, and even better, these Paleo chocolate chip cookie dough truffles taste amazing.
So let’s get into how to actually make these bite sized beauties!
First, start by combining your coconut flour with the melted coconut butter, coconut cream, maple syrup, and vanilla. The dough should resemble that of a typical cookie dough, like my simple vegan chocolate chip cookies.
Sprinkle in the sea salt and mix again.
Then fold in the chocolate chips evenly so that they’re spread throughout out, like below.
Line a baking sheet with parchment paper and take a cookie scoop to scoop about 1 to 2 tablespoons of dough at a time onto the cookie sheet. If you don’t have a cookie dough scoop, you can just use a spoon and then form the cookie dough into balls (again, about 1 to 2 tablespoons worth) and place them onto the parchment paper.
Once all of the dough is formed into mini gluten free cookie dough truffles, place the baking sheet into the freezer to chill for about 15 minutes.
When you’re just about to pull the cookie sheet out from the freezer, melt your chocolate in a microwave safe bowl or over the stove top.
To coat your cookie dough truffles in chocolate, pour a little chocolate onto the truffles and spread it around evenly so that the entire truffle is covered.
Place your gluten free cookie dough truffles back into the freezer for another 5-10 minutes to chill the chocolate, and then enjoy!
You can keep these Paleo cookie dough truffles in the freezer for up to a month or store them in the fridge for up to a week!
Are these vegan cookie dough truffles nut free?
Yes, they are! Because I know there are a lot of nut free peeps out there who may want to try a vegan or Paleo or gluten free recipe, I like to include some options that make that possible 🙂
These Paleo chocolate chip cookie dough truffles are actually already designed to be allergy friendly (except if you’re allergic to coconut or chocolate!).
They’re completely nut free as is and heavily rely on coconut, so no need to worry about lactose or eggs!
However, maybe you want to make these vegan cookie dough truffles with almond flour instead of coconut flour! That’s easy 🙂 Just use 3/4 cup of almond flour in place of your coconut flour 🙂

Ingredients
- 3/4 cup coconut flour
- 1/2 cup coconut butter, melted
- 1/4 cup coconut cream, scooped from coconut water
- 1/3 cup maple syrup
- 1 tsp vanilla extract
- 1/4 tsp sea salt
- 1/2 cup chocolate chips
- 1 1/2 chocolate bars or 1 cup chocolate chips
Instructions
- In a large bowl, combine coconut flour, coconut butter, coconut cream, maple syrup, vanilla, and sea salt until it forms a large dough ball.
- Fold in chocolate chips to make cookie dough.
- Take a cookie scoop or use your hands to form cookie dough balls, about 1-2 tbsp big.
- Place onto a cookie sheet lined with parchment paper and place into the freezer for 20 minutes.
- Before removing the cookie dough truffles from the freezer, melt the chocolate bars in a microwaves safe bowl or over the stovetop.
- Spoon chocolate over the chocolate chip cookie dough truffles until they’re completely covered and place back into the freezer for 15 minutes.
- Store in the freezer for up to a month or the fridge for up to a week.
