I’ve received so many DM’s on Instagram and emails over the past few weeks asking when Banana would come out with a mug cake. First of all, I would like to apologize for how long I took to get this recipe up!

But I’m hoping that the taste of this undetectably vegan and gluten free mug cake will help to make up for it 🙂

This is truly one of my favorite single serving dessert recipes of all time. It’s entirely oil free, refined sugar free, dairy free, gluten free, and egg free, yet you’d never be able to tell.

Vegan Mug Cake: the EASIEST healthy microwave dessert (oil free, egg free, gluten free)

This might actually rival my vegan chocolate chip cookies. Truly, you’d never know this cookie mug cake is oil free, gluten free, dairy free, and egg free.

Made with the simplest ingredients, this vegan chocolate chip cookie mug cake is insanely:

  • Gooey
  • Chocolatey
  • Sweet (yet not overwhelmingly so!)
  • Rich with cookie flavor
  • Decadent
  • Deceivingly healthy

What I really cannot get over is how these ingredients all come together. For this healthy mug cake, you’ll need:

  • oat flour + cassava flour (though you can use just oat flour, all purpose flour if not GF and GF 1:1 baking flour)
  • unsweetened applesauce
  • coconut sugar
  • dairy free milk
  • ground flaxseed
  • chocolate chips
  • baking powder + soda

I personally find the best way to serve this mug cake is with a scoop (or two!) of dairy free ice cream, but you can certainly eat it just as is.

I also like to make this cookie cake in a large mug- it can totally be single serving if you have the appetite ha! But if you want, you can split it up into two mugs and share (because sharing is caring, right? 😉 ).

How to make a gluten free vegan chocolate chip cookie mug cake

You’re going to love how easy this healthy mug cake is!

First, you’ll start by whisking together the dry ingredients in a large mug.

Then add in the wet ingredients and combine everything until the dry ingredients are fully integrated to the batter.

Fold in the chocolate chips. Now, you can either divide this mug cake into two mugs or keep it in one large mug- whichever you prefer!

Place the mug (or mugs) into a microwave and cook it for 90 seconds. Let it rest for 5 seconds, then heat it again for another 15 seconds (to ensure that it’s fully cooked).

Let the cookie mug cake rest for 2 minutes before enjoying. Then serve with dairy free ice cream or coconut whipped cream!

How do you know when a mug cake is done?

Well, the good thing is that when it comes to gluten free and egg free mug cakes, you’re not waiting for an egg to fully cook through!

That being said, the cookie mug cake will be done when the top of the cookie is set (and doesn’t look glossy). This will happen after at least 90 seconds in the microwave.

However, I like to give it just 15 extra seconds just to be sure that the outer edges of the vegan mug cake are fully cooked and the center is sort of gooey.

If you want more of a cakey chocolate chip cookie mug cake, you can cook it for an additional 30 seconds (in intervals of 15 seconds) after you’ve cooked it for 90 seconds and let it rest.

Healthy mug cake variations:

If you don’t feel like having a giant chocolate chip cookie in vegan mug cake form, not to worry! I have some very fun healthy mug cake variations that will still keep this mug cake oil free, low in sugar, egg free and dairy free!

  • Omit the chocolate chips and add in some vegan funfetti sprinkles!
  • Make it fruity for summer time, and swap in your favorite berries for the chocolate chips.
  • Add in a tsp of almond extract for a slightly nuttier version that tastes like an amaretto cookie.
  • Make it a snickerdoodle mug cake by adding in 1/4 teaspoon of cream of tartar and 1 teaspoon of cinnamon for the chocolate chips!
  • Add in a scoop of pea protein powder for an extra protein boost!

Description

Ingredients

Scale
  • 3 tbsp oat flour
  • 1 tbsp cassava flour
  • 1 1/2 tbsp coconut sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 3 tbsp coconut milk
  • 3 tbsp unsweetened applesauce
  • 1 tbsp ground flaxseed + 3 tbsp water*
  • 1/2 tsp vanilla extract (optional)
  • 2 tbsp vegan chocolate chips

Instructions

  1. Prepare the flaxseed and water mixture to form a flaxseed “egg.”
  2. In a large mug, whisk together the oat flour, cassava flour, coconut sugar, baking powder, and baking soda.
  3. Add in the dairy free milk, applesauce, flaxseed “egg,” and vanilla extract. Mix with a spoon to combine.
  4. Fold in the chocolate chips to the cookie dough mug cake batter.
  5. Divide the batter into another mug or make 1 large chocolate chip cookie mug cake.
  6. Place the mug (or mugs) into the microwave and heat for 90 seconds. After 90 seconds, heat for an additional 15 seconds.
  7. Let rest for 2 minutes outside of the microwave before serving.
  8. Enjoy with a scoop of dairy free ice cream, coconut whipped cream, or just as is!

Notes

To prepare the ground flaxseed “egg,” whisk together the ground flaxseed and water in a small bowl. Let sit for 5 minutes to activate before using.
