Vegan Chocolate Pancakes Recipe (Gluten Free!)

Vegan Chocolate Pancakes Ingredients
I am quite obsessed with how easy these vegan chocolate pancakes are to make. If you’re looking for a no-stress, fuss-free vegan Christmas breakfast to make that morning, this is your recipe.
All you will need to make these chocolate pancakes are as follows:
- Flour: you can use AP flour, gluten free 1:1 baking flour, or oat flour.
- Cacao powder: using cacao powder over cocoa powder will yield much richer chocolate pancakes, aka the most ideal way to start off any holiday morning.
- Coconut sugar: just a little to help with the bitterness of the cacao powder!
- Flaxseed: this will be used to create vegan “eggs.” If you don’t have ground flaxseed, you can grind up whole flaxseed yourself or use ground chia seed. I don’t recommend using applesauce here, as there will be too much moisture, and the pancakes won’t hold their form.
- Dairy free milk + apple cider vinegar: this creates that lovely vegan buttermilk, which helps to yield the fluffiest vegan pancakes that no one will know are vegan!

But trust me, count on needing more vegan chocolate pancakes…these little cakes go fast!
How to make fluffy vegan chocolate pancakes
Again, the full written instructions are down below, but let’s go over some key pointers on how to make vegan chocolate pancakes!
Now, my advice for all pancakes, vegan or not, is to use a pancake griddle. The one I use was literally less than $35, and it’s lasted me 10+ years. I’ve linked it down below in the recipe card, so go check that out.
First, you’ll start by making the batter. You’ll whisk the dry ingredients together, then pour in the wet. Mix everything until it becomes a consistent batter and there are no more dry streaks left.
Then, and totally optional but highly recommended, you’ll stir in some extra chocolate chips. I mean, double chocolate pancakes on Christmas morning? Do I even need to ask twice?
Next, we’ll prep the pancake griddle and get to flipping! Give the pancake griddle some time to heat, and make sure to oil it. I allow for a full minute after I’ve oiled the pancake griddle to ensure that the oil has completely heated up.
Pour about 1/3 cup of batter per pancake onto the griddle. You can obviously make your pancakes larger or smaller! Cook them for about 2 minutes on the first side, allowing them to slightly puff up and “bubble,” then flip.
Once the chocolate pancakes have cooked for another minute on the opposite side, you’re ready to serve!
Gluten Free Option
If you need completely gluten free chocolate pancakes, not a problem!
I’ve tested this recipe with gluten free 1-to-1 baking flour (specifically Bob’s Red Mill) and oat flour– both work wonderfully, and I actually prefer the oat flour more!
How to serve chocolate pancakes
Of course, these vegan chocolate pancakes ARE good on their own, but what’s the fun in that?
I recommend serving these fluffy vegan chocolate pancakes with some melted chocolate sauce, coconut whipped cream, and of course more chocolate chips!
You can also top with:
- Banana, peanut butter, and maple syrup
- Pomegranate seeds, coconut flakes, and chocolate suace
- Candied pecans and chocolate chips
- Toasted pumpkin seeds, coconut whipped cream, and cinnamon
- A pat of vegan butter, and maple syrup!

Ingredients
- 1 cup all purpose flour or gluten free 1:1 baking flour or oat flour
- 1/3 cup cacao powder
- 2 tbsp coconut sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 2 tbsp ground flaxseed with 1/3 cup water
- 1 cup dairy free milk + 1 tsp apple cider vinegar
- 1/2 cup chocolate chips
- Toppings: coconut whipped cream, fruit, chocolate chips, melted chocolate, maple syrup, nuts, seeds
Instructions
- Prepare the flaxseed and the dairy free milk mixtures in separate bowls. Set aside.
- In a large bowl, whisk together the flour, cacao powder, coconut sugar, baking powder, and baking soda.
- Add in the flaxseed mixture and the dairy free milk mixture, and mix until it’s a consistent batter and there are no more streaks.
- Stir in the chocolate chips.
- Prepare the pancake griddle or pan with coconut oil or olive oil. Once fully heated, add about 1/3 cup batter for each pancake. Cook for 2 minutes on one side, then flip to cook another 30 seconds to 1 minute on the other side. Plate and repeat for the remaining batter.
- Top and enjoy!
