Best Vegan Quiche Recipe (Gluten Free + No Tofu!)

What is quiche?

If you’re newly vegan (or even a seasoned vegan!) and looking for a fun and easy yet delicious vegan breakfast recipe to serve to your non vegan family, this vegan quiche recipe is it.

 Quiche is traditionally a French pastry made with a tart shell and filled with an egg custard. It’s super creamy, fluffy, and custard like, and usually filled with vegetables as well. However, quiche is not traditionally vegan; it contains eggs and dairy (mostly cheese and cream). It can also at times contain meat. 

Our vegan quiche recipe ensures you’re not missing out, though. It’s packed with flavor from fresh herbs, still fluffy and soft, and a wonderful savory breakfast dish for all eaters, vegan or not!

Pro tip: And if you love using chickpeas as “eggs” then you’ll also love this chickpea scramble! Over 12 grams of protein per serving!

The BEST vegan quiche recipe without tofu

You also won’t need any flours in the filling, like chickpea flour nor almond flour. This vegan quiche recipe is made with whole chickpeas (my favorite vegan egg substitute!), tons of herbs, garlic, and easily customizable with your favorite vegetables.

Mix in asparagus, cherry tomatoes, even vegan cheese for a quiche that resembles a vegan quiche Lorraine! 

This vegan quiche is truly a wonderful brunch or vegan breakfast recipe option when you want something healthier and allergy friendly. Yep, we can make this into a gluten free vegan quiche as well! And it’s naturally nut-free too.

What you need to make this eggless quiche:

For this quiche, you’ll need:

  • 1 vegan pie crust recipe: This is my all time favorite pie crust. It’s so flaky and “buttery” (don’t worry- we’re just using vegan butter, not really butter!) while being entirely dairy free. If you need a gluten free vegan pie crust, keep reading the below sections! I’ve linked my favorites!
  • Chickpeas: This makes our egg “base.” Many vegan quiche recipes use soaked cashews, but I wanted to add not only a nut-free quiche to the mix, but also a more protein-packed one!
  • Dairy free milk: Any creamy dairy free milk will do. I recommend using oat milk, but you can also use coconut milk! Keep in mind that using a thick coconut milk from the can will leave a bit of a coconut flavor or aftertaste to this quiche.
  • Herbs: I like to use a plethora of herbs to add lovely fresh flavor to this quiche!
  • Garlic
  • Sea salt: If you really miss the “eggy” taste from regular quiche, you can try black salt, or kala namak, for a closer taste to regular quiche.
  • Mixed veggies: If you want to customize this quiche, you may add in whatever veggies you want to the egg-free quiche base!

Here, we’ll go over a brief overview of the steps, along with providing visuals for a better understanding of the recipe.

What I love the most about this vegan quiche is how quick and easy it is to make. You’ll just need one piece of equipment: the food processor! I make both the pie crust and the quiche base in the food processor.

Here’s an overview of the steps for making this classic vegan breakfast recipe:

  1. Prepare the vegan pie crust:

    You can use the gluten free pie crust or just the classic vegan pie crust. Either works! You’ll need to make the crust through the par-baking instructions.vegan pie crust

  2. Next, make the quiche filling:

    To your food processor, add in all of the ingredients. Pulse until smooth. pureed vegan quiche filling

  3. Pour the quiche filling into the pie crust:

    If you’re adding in extra veggies, place them on the bottom of your pie crust, and pour the filling on top.vegan quiche before baking

  4. Bake your vegan quiche!

How to serve quiche

You might be wondering whether you should serve a quiche hot or cold. I recommend serving this vegan quiche recipe slightly warm. 

That being said, you can serve a quiche cold- this vegan quiche won’t have the same “rubbery” texture that you get with a traditional quiche when you serve it cold. So it actually is quite enjoyable and delicious!

To reheat this vegan quiche recipe: Simply preheat the oven to 300F, and place the slices of quiche onto a baking sheet lined with foil or parchment paper. Heat the quiche for 7-10 minutes, or until warm. Then serve!

Vegan quiche add-ins

The beautiful thing about quiches is that you can customize them to the season or regional area that you’re in. Here are some of my favorite vegan quiche add-ins:

  • Spinach or kale
  • Mushrooms
  • Sautéed onion
  • Nutritional yeast + turmeric (for a more yellow color)
  • Sautéed zucchini 
  • Broccoli
  • Vegan bacon
  • Vegan cheese (especially if you’d like to make a spin off of a vegan quiche Lorraine

Do I need to partially bake the pie crust?

Yes, it’s highly recommend that you partially bake, or par-bake this pie crust for the quiche recipe! The reason being is that if you just pour the eggless base onto the unbaked pie crust, you’ll risk a soggy bottom on your crust.

Not good!

Poke a few holes in the bottom of your pie crust with a fork. Then place a piece of parchment paper down, along with your pie weights. If you don’t have pie weights to partially bake your pie crust, you can also use dried rice, dried beans, and even flour!

Can I make this vegan quiche gluten-free?

Absolutely! If you’d like to make this a gluten free vegan quiche, simply follow the instructions listed for the gluten free pie dough. Another alternative is using my favorite gluten free vegan oat flour pie crust. It’s amazing!

Can I make this a crustless vegan quiche?

If you want to skip the crust all together, you may absolutely do so. This vegan quiche recipe is easily made into a crustless vegan quiche! Simply oil a pie dish and pour the filling in to bake.

Ingredients

  • 1 vegan pie crust or gluten free vegan pie crust
  • 820 grams chickpeas, rinsed and drained
  • 180 mL unsweetened plain oat milk
  • 1/4 (60 mL) cup water
  • 2 1/2 tsp sea salt
  • 1 clove garlic, minced
  • 1/2 cup de-stemmed parsley
  • 2 tbsp fresh drill
  • 1 tbsp basil
  • 1 tbsp rosemary
  • 3 tbsp arrowroot starch

Instructions

  1. Please read through all instructions before beginning.
  2. Prep: Measure out all ingredients before beginning.
  3. Make the pie crust first: Follow the instructions for making the vegan pie crust. You can omit the sugar in the recipe and just add in 1/4 tsp sea salt to the flour mixture. Complete the pie crust through the par-baking. Your pie crust should be partially baked and then allow it to cool while you prepare the quiche filling.
  4. Quiche prep: Preheat the oven to 350F. 
  5. Make the filling: In a large food processor, pulse the chickpea and oat milk until smooth. Add in the remaining ingredients, and pulse until combined. The mixture should be thick and smooth.
  6. Bake the vegan quiche: Pour the filling into the par-baked crust. Place the quiche into the oven to bake for 40-45 minutes, or until the middle is set and not wiggly. 
  7. Chill or serve warm: You can serve this vegan quiche warm or cold. Top with additional fresh herbs and vegan sour cream as needed. Slice, and enjoy! 
  8. Storage: Store any leftovers in an airtight container and in the fridge for up to 5 days or in he freezer for up to 3 months.

Notes

Gluten free: Make sure you use gluten free flour for the pie crust if you need gluten free. You can also use this oat flour vegan pie crust if you’d prefer!

Oat milk: If you don’t want to use oat milk, you can use coconut milk, almond, cashew, or soy milk. Make sure that it’s unsweetened and plain. 

Crustless: If you would like to make this a crustless vegan quiche, simply omit the pie crust section, and generously grease a pie dish. Pour the filling into the pie dish and continue with the baking instructions.
