I totally get you- I used to be on a banana bread oatmeal bowl kick for weeks at a time. And avocado toast, while great, is way overdone at this point.
It’s easy to fall into a rut with your breakfast routine, which then leaves you feeling uninspired throughout the day. After all, our breakfasts not only should be nutrient packed, but they should also taste good too.
This is why we decided to round up some of our favorite healthy vegan breakfast recipes from not only The Banana Diaries, but some of our other vegan food blogging friends as well!
These vegan breakfast options below had to meet the following. They had to be:
- Completely vegan and plant-based by nature. They couldn’t give the option of vegan, but had to be vegan as is. This means being completely free from eggs, meat, dairy, and any other animal-based ingredients.
- Low sugar or lower in sugar than their conventional counterparts. We wanted to make sure that even the sweet breakfast options weren’t sending you on a sugar roller coaster first thing!
- Have the option of gluten-free or were naturally gluten-free. You’ll see that each recipe is noted as gluten-free, gluten-free option, or even some Paleo and Whole30 options (which means that it’s definitely okay to eat if you need gluten-free!).
- Easy and accessible to all. This means no superfoods that are hard to find and expensive. We want everyone to be able to enjoy these breakfasts.
As noted above, you’ll also find some Whole30 vegan breakfast options. Since Whole30 is a big January movement, as is Veganuary, we wanted to provide some plant-based options for even the Whole30-ers to enjoy!
My go-to vegan breakfast ideas
Whether you’re embracing the vegan diet for the first time, or you’re a seasoned plant-based eater looking to spruce up their vegan breakfast options, these recipes below are definitely for you.
Personally, I like to stick to meal prepping a few options at the beginning of the week to have on the week days, then I like to go a bit more fun and indulgent on the weekends.
This means maybe some oatmeal or grab-and-go breakfast bars for Monday through Friday, then pancakes and waffles on the weekends.
Of course, I have tons of amazing vegan cinnamon rolls recipes and sweet breads; but since we’re focusing on healthy breakfast recipes, I wanted to focus on some of the lighter breakfasts! However, monkey bread, cinnamon rolls, and babka are amazing for a fun weekend treat.
Maybe you have more time in the morning to enjoy a plate of pancakes (though these pancakes recipes below are super simple and quick!) or you’re really more of a savory breakfast person (we have TONS of vegan breakfast ideas for the savory lovers!). Whatever the need, we have it.

Vegan Pancake Recipes, Crepes, and French toast:
Gluten free option. These super fluffy and easy one bowl buttermilk pancakes are my absolute favorite for a fun breakfast! Completely vegan, dairy free, and can be gluten free (use oat flour or gluten-free 1:1 baking flour!).
Gluten free option. These blender banana pancakes are perfect for both kids and adults! With a few simple ingredients (think banana, oatmeal, and flaxseed!), this blender batter easily transforms into the fluffiest vegan pancakes that everyone will enjoy.
Gluten free option. I cannot get over how deliciously decadent yet secretly healthy these vegan hot chocolate pancakes are! If you want more of a sweet and decadent healthier breakfast option to kick off the New Year, this recipe is your ticket!
Gluten free option. If you still have a can of pumpkin lying around, then definitely make these super light and tender pumpkin spice pancakes. Top with a drizzle of maple syrup for a completely refined sugar free healthy breakfast option!
Gluten free. Just because there are chocolate chips doesn’t mean they’re not healthy! I like to use stevia-sweetened chocolate chips for Lily’s Sweets for these oat flour-based chocolate chip pancakes for an easy and low sugar gluten free vegan pancake option.
Gluten free. These copy cat Cafe Gratitude buckwheat pancakes are some of Jared and my favorite. Cafe Gratitude was our favorite restaurant to visit when we went to LA, and these pancakes taste just like theirs!

Gluten free. Think you can’t get a lot of protein in vegan overnight oats? Think again! Each of these 3 flavors of overnight oats is packed with over 30 grams of protein and makes for the best healthy vegan breakfast to kick off the New Year!
Gluten free. If you love your Instant Pot as much as I do, then you definitely want to make this Instant Pot oatmeal recipe. Like a slice of zucchini bread in a bowl, this easy IP oatmeal is full of protein and yummy zucchini bread spices!
Gluten free. Have your coffee and your oatmeal all in one! These mocha overnight oats are full of the coffee and cocoa flavor while offering up a lot of nutrients in one breakfast bowl.
Gluten free, Paleo, Whole30. If you’re doing Whole30 this January (or a Whole30 Veganuary?), then I definitely recommend adding in this grain-free hot cereal bowl to your rotation. I’m personally a big fan of sweet breakfasts, and I think that Whole30 could use a lot more vegan and sweet breakfast options. This is my go-to Whole30 oatmeal bowl for that reason!
Gluten free. These super creamy and easy blueberry overnight oats are bursting with flavor and packed with not only vegan protein, but nutrients as well for a filling and delicious healthy breakfast!
Vegan Breakfast Breads & Muffin Recipes
Gluten free. The best part about these peanut butter banana muffins is that you can easily make them in a blender!! That’s right! Just meal prep them at the start of the week and you have an easy grab-and-go breakfast option or snack all week long. Great for kids and adults alike!
Gluten free option. I kid you not, this gingerbread loaf cake tastes just like the Starbucks version, yet is entirely oil free and contains only 1/3 of the sugar! If you’re not over the holidays, then definitely make this loaf!!
Gluten free option. Of course, we have to have a classic banana bread option here. This is my go-to banana bread recipe and it brings a smile to my face every time. I highly recommend giving this banana bread a go! We also have an amazing vegan chocolate banana bread– readers just love this one!
Gluten free. Who doesn’t love a good blueberry muffin?! My brother and his girl friend rave about these easy gluten free blueberry muffins every time I make them. They’re just one bowl and only use oat flour- no expensive gluten free 1:1 baking flour needed!
Paleo, gluten free. If you’re following a Paleo or grain free diet, then I definitely recommend trying these coconut flour-based banana muffins. Add in some Paleo-friendly chocolate chips for a fun twist on a classic healthy breakfast option!
Gluten free option. I could easily eat zucchini bread any time of year, especially in the form of chocolate zucchini bread. This zucchini bread was definitely the most made out of all of my bread recipes last year, and for a good reason. It tastes like a brownie in loaf form, yet is packed with veggies, lower in sugar than most zucchini bread, and easily made gluten-free!

Gluten free. I’m totally with you- I’m so grateful we live in a world where breakfast cookies first thing in the morning is acceptable! These oatmeal chocolate chip cookies are a wonderful treat and taste like dessert for breakfast!
Gluten free. If you loved Chewy granola bars as a kid, then you definitely want to make these easy, one bowl, date-sweetened granola bars! They taste just like the classic, only with a bit more added nutrients. The perfect healthy vegan breakfast for the kids at heart 😉
Gluten free, Paleo option. I personally love these blueberry crumble bars; they’re entirely gluten-free and can be made Paleo if you need grain-free as well. It tastes like a slice of blueberry pie in breakfast bar form!

Gluten free, Paleo option. A classic flavor combo, this is my go-to vegan breakfast chia pudding recipe. It’s SO easy to make the night before, and gets so voluminous in the morning. I add in some pea protein for extra nutrients. Highly recommend!
30. Protein Chia Pudding 3 Ways via The Banana Diaries
Gluten free, Paleo option. I love these chia pudding recipes because not only are they absolutely delicious and so easy, but they’re also packed with protein. Some flavors are completely Paleo too, if that’s needed!
31. Strawberry Chia Pudding via Homemade Lovely
Gluten free, Paleo. This easy strawberry chia pudding is perfect for when the weather starts getting nicer and those strawberries are really in season. Like a refreshing treat first thing in the morning!

Savory Vegan Breakfast Recipes
Gluten free option. If you grew up with New York bagels like I did, then you’ll definitely want to try out this vegan bagel recipe stat. These vegan bagels are so incredibly easy to make, and there’s a wonderful gluten-free option, as well as a yeast-free option for those who don’t want use yeast! Smear on some dairy free cream cheese or peanut butter, and you have a wonderful and hearty vegan breakfast!
Gluten free. Of course, I love having options, and these vegan breakfast burritos hit the spot. I personally love all 3 flavors (sweet potato and black bean, lentil and avocado, and yogurt and berries), and each burrito has over 15 grams of plant based protein. Use a gluten free wrap, such as Toufayan, for an easy vegan and gluten free breakfast option.
Paleo, Whole30, Gluten free. If you’re doing Whole30 this January, I definitely recommend making a stuffed sweet potato breakfast boat. You can make it sweet or savory, and they’re so easy to prep at the beginning of the week!
Paleo, Whole30, Gluten free. If you still enjoy eating your breakfast from a bowl, then I definitely recommend this Whole30 sweet potato breakfast bowl. Basically a stuffed sweet potato, but mashed and in bowl form!
Gluten free. Think that vegans can’t enjoy a veggie frittata? The Veggie Society has us covered! This easy vegan frittata is full of frittata flavor and is the perfect savory vegan breakfast option.
