Paleo Chocolate Chip Banana Muffins
These insanely easy Paleo banana muffins are loaded with chocolate chips and completely vegan and gluten free! Perfect for a quick breakfast that kids and adults love!
These paleo chocolate chip banana muffins are just out of this world!
Inspired by my naturally sweetened and easy as ever paleo banana bread, I decided to try my hand at muffins, and let me tell you: these muffins tastes like childhood in a bite!
What I love most about these muffins too is that they’re perfect for breakfast, a snack, to take to a party, or for dessert! I love topping one of these paleo chocolate chip banana muffins with a little almond butter and– of course — extra chocolate chips!
What makes these Paleo banana muffins healthy?
There are a few reasons why I think these muffins are just the ultimate healthy banana muffins.
- These muffins are only sweetened with banana. Yep! There’s no added sugar in here, save for some very ripe bananas! I promise you that they really don’t need that extra sugar, and you can really taste the banana versus just a sweet muffin!
- They’re easily made nut free. These are flourless banana muffins, but don’t worry, we’re not swapping in almond flour. In fact, we’re actually using coconut flour, which is another fantastic grain free Paleo flour!
- These healthy banana muffins are made with simply ingredients. Bananas are some of the cheapest foods in the grocery store, along with coconut flour, spices, and leavening agents. Plus, flaxseed, which is the egg substitute we’re using, is actually much cheaper per serving than eggs!
- They’re completely vegan. As you know, I’m not about labelling myself or saying one “diet” is better than the other, but being that they’re vegan means that people with dairy and egg allergies are more than welcome to consume these without worry!
Paleo banana muffins for the win, people. Seriously.
What’s in these Paleo Banana Muffins?
Before we begin baking, let’s assemble all of the necessary ingredients! For these Paleo chocolate chip banana muffins, you’ll need:
- Bananas: well isn’t that obvious haha! You’ll only need three, and I highly suggest you let them get super ripe!
- Coconut Flour: one of my favorite paleo flours because you only need a little to go a long way (unlike using bags and bags of almond flour!).
- Almond Butter: you can also do coconut butter or a seed butter if you have an allergy. I’m always a fan of Artisana Organics because they’re so critical of their selection of nuts and seeds. If you don’t want to use almond butter, feel free to swap in your favorite! I bet it would taste amazing with walnut butter 🙂
- Ground flaxseed mixed with water (flaxseed egg): yep, these Paleo banana muffins are completely vegan! To make a flaxseed “egg,” which is the term for flaxseed and water because it basically acts like an egg, simply mix together the flaxseed with the water and let sit for a few minutes before baking!
- Baking Soda/Powder: these agents will help the Paleo chocolate chip banana muffins rise and not taste funky due to the baking powder. If you’re strictly paleo, check out my hack for a paleo baking powder here! If you’re not, go forth with baking powder 🙂 It does the trick!
- Chocolate Chips: I did a poll on my Instagram and found out that most of you are all for it- chocolate chip banana bread is just the way to go! For a paleo chocolate chip that’s also vegan, check out Pascha’s Chocolate Chips. If you’re good with a little stevia, you all KNOW I love me some Lily’s Sweets Chocolate Chips 🙂 Oh, they’re just my fave!
You’ll notice that while these Paleo vegan Banana muffins are completely gluten free and can contain nuts, they can also be nut-free. So if your child or someone at work or school has a nut allergy, simply swap out the almond butter (we’re not using almond flour here, which makes things easier!) for coconut or a seed butter.
That way everyone can enjoy these muffins!
How to make Paleo chocolate chip banana muffins
Riffing off of my Paleo Banana Bread, it’s honestly one of my simplest recipes (although, to be frank, I try to keep all of my recipes simple and easy! I don’t want to scare anyone away!).
I make it weekly!
All you need is a bowl and a spare 5 minutes to get the batter whipped up! To make these muffins, simply:
- Mash together the banana.
- Add in the remaining wet ingredients and mix it all together.
- Sift in the dry ingredients, saving the chocolate chips for last once everything else is mixed in.
- Then fold in the chocolate chips and distribute the batter evenly into 12 muffin cups or 6 large muffin cups.
- Bake and enjoy!
Can you freeze banana muffins?
Certainly! You can absolutely freeze these Paleo banana muffins for up to 2 months! But I promise you, they won’t last you that long 🙂
What I like to do is make them at the beginning of the week, then freeze them that same day to have throughout the week.
It’s a great and easy meal prepping hack that gives me a fun and healthy sweet treat to enjoy 🙂
How can I make my muffins light and fluffy?
Think that because these are flourless banana muffins that they won’t be just as delicious and fluffy as a regular banana muffin? Think again! These banana muffins turn out to be some of the fluffiest muffins you’ve ever had.
It’s all because of the leavening agents, so don’t forget those! I give a hack, as I mentioned above, for making a Paleo baking powder (which means it’s also gluten free!).
I hope you love this recipe as much as I do! And let me know below in the comments what types of banana bread or banana muffin recipes you’d like to see next 🙂
