I actually used to hate chia seed pudding. As a food blogger and future certified nutritionist, I feel like I’m about to get my head cut off for saying so! But I don’t hate chia seed pudding anymore (focus on the operative word here, people!).

That’s because I finally figured out how to make to make chia seed pudding in a way that I like! Want to know the secret?

Okay, okay, I’ll letcha in on it 😉

It’s stirring in yogurt! Yes, yogurt! Whether it’s coconut milk based (one of my faves for that sweet coconut flavor), almond, or regular, yogurt is the key component for texture in chia seed pudding.

You see, I didn’t like it before because it was wayyyy too watery. People always said, leave it in the fridge for longer! It’ll thicken up!

One time, I left my chia seed pudding in the fridge for 3 days…apparently, I’m supposed to plan ahead my cravings 3 days in advance and just hope that it’s the right texture (which is wasn’t, I might add)?! Boulder dash, as my dad likes to say.

Me being me, I prefer to solve my own issues 🙂 it’s a better learning experience, I think! So I thought, what’s another base that could increase the thickness, but not be too thick that I can’t even take a spoonful?

Follow the 1:2 ratio 😉 For my double chocolate chia seed pudding, I add in 1 part yogurt + 2 parts almond or coconut milk. This ensures that it’s going to thicken up but it won’t be so thick that you can’t take a spoonful!

Now, let’s get onto the flavor profile and perks of this recipe!

This recipe is absolutely delicious and basically tastes like dessert. So you could start your day with it and end your day! What could be better?!

What I love about this chia seed pudding recipe is that it packs in the omega-3s (which are great for bone-building) and protein while being vegan, paleo, and Whole30 compliant!

Now to make it double chocolate, I add in 2 tbsps of my favorite Imlak’esh Organic Cacao Powder and 1 tsp cacao nibs. Absolutely delicious. Now, if I wanted some extra nutrition, I add scoop of Ancient Nutrition’s Keto Cocoa powder. I just love the Keto Cocoa because it’s rich in ashwaghanda, reishi, and chaga, as well as coconut MCTs (medium-chain triglycerides).

This, however, is not vegan, so if you’re following a strictly vegan diet, just follow the former double chocolate recipe! You’ll still get so much nutrition for the amazing antioxidants found in chocolate 🙂

Yep, this is a chocolate lover’s DREAM.

Now to prepare this chia seed pudding:

You’ll need a small jar (I love these weck jars! They’re too cute!), coconut yogurt, almond or coconut milk, cacao powder and nibs, cinnamon, and the star, chia seeds.

Stir together yogurt and the cacao powder, then add in the almond milk, cacao nibs, chia seeds, and cinnamon! Once it’s completely mixed, cover and store in the fridge for at least 8 hours, or overnight.

In the morning, top with bananas for sweetness (it’s a very rich pudding!) and enjoy with a cup of coffee!

Ingredients

Scale
  • 1/3 cup coconut yogurt (can use almond )
  • 2/3 cup almond milk (unsweetened vanilla)
  • 2 tbsp chia seeds
  • 2 tbsp cacao powder
  • 1 tbsp cacao nibs
  • 1 dash cinnamon

Optional:

  • 1 scoop Ancient Nutrition Keto COCOA

Instructions

  1. In a small bowl or jar, mix together cacao powder and yogurt until thoroughly combined (add Keto COCOA powder in here as well if using).
  2. Next, whisk together almond milk, chia seeds, cacao nibs, and cinnamon into the yogurt cacao mixture.
  3. Cover and store in the fridge for at least 8 hours, preferably overnight.
  4. Remove from the fridge, and top with bananas and cacao nibs!
