These super fudgy and rich vegan zucchini brownies are the ultimate indulgence while being full of fresh zucchini, refined sugar free, dairy free, and gluten free! So easy to make, and you’d never know these brownies are healthier!

Get ready for the ultimate fudgy and chocolatey vegan zucchini brownies! Adapted from my classic vegan brownies, these healthy zucchini brownies are loaded with fudgy and melty chocolate, hidden with fresh zucchini, and absolutely decadent.
You’d never know that these zucchini brownies are eggless, dairy free, gluten free, and refined sugar free. Even kids just love these brownies because all you taste is super rich and sweet chocolate! The perfect brownie recipe to use up all of that zucchini!
This is going to quickly become your favorite zucchini brownie recipe, vegan or not!
Can you tastes the zucchini in these brownies?
Because we’re grating the zucchini, which makes it super fine, you won’t be able to taste any zucchini in the brownies. Heck, you won’t even be able to see it! Some graters are more widely set, which means the zucchini will be thicker. However, since zucchini is so mild in flavor, and the chocolate is very overpowering, not even kids will be able to taste tat there are veggies in these fudgy squares of chocolate!
How to make vegan zucchini brownies
Like with all of my recipes, the full written instructions, as well as the measurements for the ingredients, are found down below in the recipe card at the bottom of the post. However, we’ll go over a brief overview, along with providing even more tips and photos, to help make sure these zucchini brownies come out perfectly!
For the ingredients, you’ll need the following:
- Zucchini
- Flour: use gluten free as needed!
- Cocoa powder: I used a super rich cocoa powder from Rodelle, which is why these brownies look super fudgy. I highly recommend it!
- Coconut sugar: you can use granulated sugar if you don’t need these healthy zucchini brownies to be refined sugar free. However, coconut sugar does provide a wonderful caramel taste.
- Vegan butter
- Applesauce
- Dairy free milk
- Chocolate chips
I recommend preparing and weighing all ingredients before beginning. It’s also important to prepare your baking pan before beginning as well.
The zucchini brownie batter
Once your ingredients are prepped, it’s time to make the brownies! First start by whisking together the dry ingredients in a medium bowl. Then set this aside.
Next, you’ll melt the vegan butter until hot. This is similar to what we do to make vegan ganache (which would also be a wonderful topping onto these healthy zucchini brownies!). Add in the chocolate chips and whisk together until melted. Then you’ll add in the applesauce and dairy free milk, and mix until combined. Finally add in the coconut sugar to complete the batter.
Once the wet ingredients are all whisked together, you can then add in the dry ingredients and fold until nearly mixed. You’ll still see some dry streaks left, and that’s perfect. We don’t want to over mix the batter. Add in the zucchini and remaining chocolate chips, and fold to combine.
Bake and cool the brownies
Once the batter is made, you can pour the batter into your prepared pan and bake! Now, the trick to the fudgy center is actually in allowing the brownies to cool for 20 minutes after baking. This allows the chocolate and vegan butter to solidify more, creating that super fudgy and chewy center. It also makes it so much easier to slice!

Recipe tips for making the fudgiest zucchini brownies
- The batter might seem dry at first: do NOT worry! This is totally normal. Once the zucchini is mixed in, you should get a super nice and smooth batter. Just be careful not to over mix, or else you’ll end up with gummy zucchini brownies, rather than fudgy!
- Using a kitchen scale will give you way more accurate results. I’ve provided both cup measurements and gram measurements. The gram measurements will give you more accurate results, as sometimes people scoop the flour, and other ingredients, which gives them way more than they actually need.
- It doesn’t matter the size of your zucchini! We want you to use up all of that zucchini from the season! Since we’re measuring and weighing the grated zucchini, it doesn’t matter what size you use. Some people say that a larger zucchini contains less water than a smaller one. But this recipe is so rich and fudgy, it won’t make a difference! I’ve tested it with both large and small zucchinis. Very similar, if not identical, results.
- If you froze the zucchini: please allow it to come to room temperature! I have not tried this recipe with using frozen zucchini that’s not been thawed.
- Make these gluten free zucchini brownies. All you need to do is swap in gluten free 1:1 baking flour! I recommend Bob’s Red Mill in the blue bag.
- DO NOT pat the zucchini dry. Yes, some recipes call for that. NOT THIS RECIPE. The gram measurements are for zucchini that’s been freshly grated. NOT for zucchini that’s been patted dry. I promise!
- Storage: you can store any leftover brownies sliced and frozen in an airtight container or baggy for up to 3 months. Alternatively, these brownies will stay fresh in the fridge (in an airtight container) for up to 4 days.

Ingredients
- 1 cup (175 grams or 6.17 ounces) grated zucchini (do NOT pat dry)
- 1 cup (125 grams) all purpose flour or gluten free 1:1 baking flour
- 1 cup (100 grams) cocoa powder
- 2 tsp baking powder
- 1/2 cup (113 grams) vegan butter
- 1 cup (170 grams) vegan chocolate chips, divided
- 1 cup (160 grams) coconut sugar
- 1/2 cup (100 grams) dairy free milk, room temperature
- 1/3 cup (85 grams) unsweetened applesauce, room temperature
- Chocolate chips for topping
Instructions
- Preheat the oven to 350F, and grease and line an 8×8″ pan with oil and parchment paper.
- Prepare the ingredients. Grate the zucchini and set aside. Measure and weigh out all ingredients before beginning for an easy process.
- Whisk together the dry ingredients. In a medium bowl, whisk together the flour, cocoa powder, and baking powder. Set aside.
- Make the vegan zucchini brownie batter. Melt the vegan butter until hot, and pour into a large bowl. Add in 1/2 cup of the chocolate chips, and whisk together until the chocolate chips have completely melted. Then add in the applesauce and dairy free milk, and whisk to combine. Finally, add in the coconut sugar, and whisk until completely mixed into the batter. Carefully sift in the flour, and using a rubber spatula, begin to fold the flour into the batter. Mix the batter until there are just a few streaks of flour left. Then add in the zucchini and remaining chocolate chips. Fold the batter until the zucchini and chocolate chips are evenly distributed.
- Pour the batter into the prepare making pan and gently spread the batter to reach the edges of the pan. Bake the brownies fro 27-30 minutes, or until a toothpick comes out clean.
- Remove the brownies from the oven, and allow them to cool in the pan for 20 minutes. Giving them time to cool allows the vegan butter and chocolate to come back to room temperature and solidify more for an easier slice. Then you can slice and enjoy!
