I don’t know about you, but I’m all for a no heat chocolate truffles recipe. These vegan chocolate truffles are the epitome of decadent, ultra rich, and secretly healthy treat…ready within minutes.

If you want a healthy easy vegan dessert, look no further.

You’ll only need 4 entirely vegan, Paleo, nut free, coconut free, and pantry staple ingredients to make these “fancy” chocolate truffles.

I say “fancy” because I feel like they’re really just fooling everyone- there’s no way that a dessert ready in 5 minutes can be “fancy,” can it??

Oh yes it can!

I’m serious, these chocolate truffles are truly made in under 5 minutes.

And yet you come out with the fanciest looking treat fit for any dinner party.

I’m serious! No one will know that these chocolatey bites are entirely vegan, Paleo, grain free, quadruple the protein of a traditional chocolate truffle, and made with only 4 ingredients.

I mean, you really cannot beat this. These vegan chocolate truffles are the perfect healthy meal prep dessert, a fantastic healthy snack to have when you’re getting those 3 pm cravings, or even a fancy treat to bring as a gift.

The latter is actually one of my favorites ways to give gifts (obviously, I love making treats for people haha!): I don’t know anyone who wouldn’t want a jar of these secretly healthy vegan truffles!

What you need to make this vegan chocolate truffles recipe:

So as I mentioned before, in order to make these secretly healthy vegan chocolate truffles, you’ll only need 4 ingredients. I promise, JUST FOUR:

  • Pitted dates (although you can purchase dates with the pits in them, and just de-pit them at home)
  • 100% dark chocolate
  • Pea protein (for added protein benefit, but you can omit if you’d like!)
  • Cacao powder

Now, you’ll notice that these healthy chocolate truffles are entirely coconut free as well. I know that some readers have asked for more coconut free options too, so here’s one of the many recipes coming for you!

Another note about the pea protein powder: this is optional but I highly recommend it! You won’t taste it one bit, but I love adding a little boost of plant based protein to my treats 🙂

Equipment-wise, you’ll just need a food processor! That’s it! These are entirely no cook, no bake chocolate truffles!

Do I need a food processor or can I use a blender?

You can absolutely use a blender if you don’t have a food processor, but just make sure it’s a high powered one. I wouldn’t recommend using a nutribullet or any blender like that for this vegan chocolate truffles recipe, as I don’t think it will blend the dates well enough.

For a food processor, you can find them pretty decently priced on Amazon. I recommend the Oster Kitchen Blender and Food Processor combo (basically a 2-for-1 deal) or the Hamilton Beach Food Processor (the latter has lasted me 7 years!).

How to make healthy chocolate truffles

These vegan Paleo chocolate truffles are almost too easy. Essentially all you need to do is this:

  1. Blend the ingredients together until smooth.
  2. Roll the batter into truffles.
  3. Swirl around in cacao powder and serve!

Of course, I have some tips to ensure your truffle making goes incredibly smooth (just in case!):

  • Soak the dates in warm water. This will quickly soften the dates so that you can easily and swiftly make your truffles.
  • Use 100% dark chocolate. Yes, that means no sugar added, very rich and bitter dark chocolate. The reason being is that the dates make this truffles recipe so sweet, so you need a bit of bitterness to make it just right.
  • Roll in fun toppings! You can do cacao nibs, vegan sprinkles, crystal sugar, or even crushed vegan cookies!

How to store vegan chocolate truffles:

This recipe is also wonderful because not only is it no bake, and you can just pop one in your mouth immediately, but they also are wonderful once they’ve hardened up a bit in the fridge.

I recommend storing them in an airtight container in the fridge for up to 2 weeks. You can also freeze them for up to 3 months!

Instructions

  1. In a large food processor, puree the dates, melted chocolate, and unflavored pea protein powder all together until it’s a consistent and thick chocolate batter.
  2. Use a tablespoon or small cookie scoop to scoop about 1 tablespoon of dough and roll it in the middle of your palm to form a truffle. The batter is very sticky, so it will get on your hands.
  3. Lightly roll it in cacao powder, and roll it once more in your palms to evenly distribute the cacao powder.
  4. Place onto a clean plate, and repeat for the remaining batter.
  5. Eat immediately or store in the fridge in an airtight container for up to 2 weeks or 3 months in the freezer.

*I recommend using 100% chocolate here, as the dates make this very sweet.
