The ultimate homemade soy free vegan nuggets recipe
These cauliflower nuggets are the best, whether you’re in a rush to get dinner going for the kids, you’re meal prepping a healthy vegan comfort food for dinner throughout the week, or you’re bringing these nuggets to a summer barbecue (hey, vegans can eat too ya know! 😉 ).
Plus they’re made with the simplest of ingredients:
- Cauliflower
- Cassava flour
- Pea protein (plain, so the only ingredient is pea protein)
- Cumin
- Sea salt
- Coconut oil

Yes, you read that right! Today’s recipe is in collaboration with Plant Snacks, a grain free vegan chip made from the cassava root! They’re truly one of my favorite snacks, but I thought why not level it up and use chips in a wholesome comfort food recipe?
And no, this is not just breaded cauliflower- trust me, it’s way better! We’ll start by pureeing the cauliflower and making it into a dough that we’ll then mold into the nuggets.
It’s a fantastic way to not only get some extra plant based protein in, but also have an allergy friendly healthier option for kids and adults that adds more veggies to their meal!
How to make Cauliflower Nuggets Step by Step
These soy free vegan chicken nuggets are so incredibly easy to make and they’re ready in 30 minutes max, which makes them a perfect weeknight meal or meal prep dinner recipe to have throughout the week!
Before we start, you’ll just need to grease a baking sheet with coconut oil, preheat your oven, and make sure that your Plant Snacks Sea Salt Cassava Root Chips are mashed into bread crumbs or a powder (whichever you prefer).
Let’s walk through the steps:
- First, you’ll need to steam the cauliflower rice, then puree it into a mash, like below.
2. Next, you’ll add in the cassava flour, pea protein powder, sea salt, and cumin, and blend everything together.
3. Then, you’ll use a spoon to form the cauliflower dough into nuggets, dip them into the bread crumb bowl, and lay them onto a baking sheet.
4. Finally, you’ll bake the soy free vegan nuggets, flipping them over after 10 minutes, then serve!
How fun and simple is this recipe?

Description
Easy and kid friendly vegan cauliflower nuggets that are packed with plant based protein, grain free, gluten free, and soy free!
Ingredients
- 16 ounces cauliflower rice (plus 1/4 cup water for steaming)
- 1 1/3 cup cassava flour
- 1/2 cup pea protein, plain
- 2 1/2 teaspoons finely ground sea salt
- 1 tablespoon ground cumin
- 4 cups Plant Snacks Sea Salt Cassava Root Chips
- 2 teaspoons coconut oil
Instructions
- Preheat the oven to 375F and grease a baking sheet with coconut oil.
- In a medium saute pan, steam the cauliflower rice with the water, covered on medium-low heat. Steam the rice for about 7 minutes or until soft and translucent. Remove from heat and allow the rice to cool for 5 minutes.
- Transfer the cauliflower rice to a large food processor. Pulse the food processor until the cauliflower rice becomes a puree.
- Add in the cassava flour, pea protein, sea salt and cumin, and pulse again until the cauliflower mixture becomes a sticky dough. Set aside.
- In a large bag or in a blender, smash or blend the Plant Snacks Sea Salt Cassava Root Chips into a a bread-crumb texture or a fine powder, whichever you prefer. Transfer the bread crumbs to a large bowl.
- Use a spoon to scoop about 2 tablespoons of cauliflower dough and roll it with your hands into an nugget shape. Dip the nugget into the bread crumb bowl, coating both sides evenly. Place the nugget onto the baking sheet and repeat to make 20 nugget or until you’re finished with the dough.
- Place the baking sheet into the oven to bake for 10 minutes. After 10 minutes, carefully flip each nugget onto the other side to continue browning for another 10 minutes.
- Remove from the oven and let cool before serving.
