Vegan S’mores Brookie Recipe(Brownie Cookies)

What are brookies or brownie cookies?
So this is a bit of a twist off of the ever-so-popular slutty brownies. I think they were actually more popular when I was in high school, especially on Pinterest!
Basically a slutty brownie is a layer of cookie, a layer of Oreo’s, and a layer of brownies.
Other names for similar recipes are brownie cookies, cookie brownies, brookies, or crownies. The only difference here is that none of them contain Oreo’s in the middle.
This vegan s’mores version is like a vegan brookie recipe but with marshmallows in between. So it’s then also like vegan slutty brownies, only with vegan marshmallows instead of Oreo’s!
Essentially, this brownie cookie recipe is the ultimate mash up of three of the best desserts out there- veganized!
What you need to make s’mores brownie cookies (or slutty brownies)
For this vegan version of s’mores brownie cookies, you’ll basically use a vegan chocolate chip cookie recipe (aka mine 😉 ), a vegan brownie recipe (*ahem* also mine haha!), and vegan marshmallows!
The basic ingredients are:
- Flour: you can use gluten-free 1:1 baking flour here if needed!
- Applesauce: I like to use unsweetened here.
- Flaxseed: for flaxseed “eggs”
- Cacao powder
- Coconut sugar
- Coconut oil
- Chocolate chips: I like to use bittersweet stevia-sweetened chocolate chips, such as Lily’s Sweets, which are also dairy-free!
- Vegan marshmallows
That’s really it! Very similar ingredients are used for both the cookie and brownie recipe, and they can be made using the same bowl as well to save some clean up 🙂
How to make vegan s’mores brookies (or brownie cookies)
Essentially you’ll be making the vegan cookie dough, then layering on the vegan marshmallows, then finish with the vegan brownie batter.
- Make the cookie dough: I actually used my vegan chocolate chip cookie recipe, so the recipe steps are very similar! You’ll beat together the coconut oil, applesauce, and coconut sugar, then sift in the flour and fold in the chocolate chips.
- Press the cookie dough into the bottom of the pan then layer on the vegan marshmallows. For vegan marshmallows, I personally like the Dandie’s brand or the Trader Joe’s brand (which is weirdly vegan!).
- Make the brownie batter: then finish by making the brownie batter. This recipe is also heavily reliant on my fudgy vegan brownie recipe on the blog! You can use the same bowl that you made the cookies for the brownies. Combine the wet ingredients, then sift in the cacao powder and flour, and fold in the chocolate chips.
- Spread the batter on top of the vegan marshmallows and bake the brookies!
- Let the vegan s’mores brookies cool for 10 minutes before slicing into them. You definitely want that gooey marshmallow layer, but if you slice them too soon, the brownies will crumble!
How to tell when this vegan brookie recipe is ready
Baking brownie cookies is a bit harder to tell when they’re actually done, as the cookie layer will take a bit longer than normal to bake.
I personally like to use a toothpick to tell if they’re ready. Stick a toothpick into the middle of the pan, and if the toothpick comes out semi-clean (it can be slightly crumbly but not gooey), then you’re ready to go!
If the batter is still gooey on the toothpick (irrespective of the marshmallow), then there’s still some time left for them to bake.

Ingredients
Cookie Layer:

1/2 cup coconut oil, softened

1/3 cup unsweetened applesauce

1 cup coconut sugar
-
1 tsp vanilla extract
-
1 3/4 cups organic flour
-
1 tsp baking soda
-
1/4 tsp sea salt
-
3–6 tbsp unsweetened vanilla almond milk

3/4 cup Lily’s Sweets dark chocolate chips
-
1 large bag vegan marshmallows
Brownie Layer:
-
4 flaxseed eggs
-
1 cup vegan butter or coconut oil, melted
-
1 cup coconut sugar
-
1/2 cup melted Lily’s Sweets chocolate chips

1 cup flour or gluten free 1:1 baking flour

1 cup cacao powder
-
2 tsp baking powder
-
1/2 cup Lily’s Sweets chocolate chips
Instructions
- Preheat the oven to 350F and line an 8×8 baking pan with parchment paper.

Make the cookie layer: In a large bowl, beat together the softened coconut oil, applesauce, coconut sugar, and vanilla extract until smooth and creamy.

Sift in the flour, baking soda, and sea salt, and fold the dry ingredients into the wet. Add in the dairy free milk, starting with 3 tbsp and adding more if needed until you get a smooth and slightly sticky dough.

Fold in the Lily’s Sweets chocolate chips.

Press the cookie dough into the bottom of the pan.

Line the cookie dough with vegan marshmallows.

Make the brownie layer: in a large bowl, mix together the flaxseed eggs, coconut sugar, vegan butter, and melted chocolate with a spoon.

Sift in the flour, cacao powder, and baking powder, and use a rubber spatula to fold the dry ingredients into the wet until it’s just mixed.

Fold in the remaining chocolate chips, and pour the batter on top of the marshmallow layer.

Bake the bars for 25-27 minutes, or until the top of the brownie layer has set.

Remove from the oven and allow the bars to cool in the pan for 10 minutes before removing and slicing.
