The best bread for vegan French toast:
Of course, the best bread in general for any French toast recipe is obviously brioche bread. However, store bought or bakery-bought brioche bread is hardly ever vegan (eggless and dairy free). That being said, I do have a phenomenal vegan brioche bread recipe that I used to make this vegan French toast recipe.
My version of a vegan brioche bread truly tastes just like traditional brioche- it’s soft, fluffy, melt in your mouth, and just slightly sweet. The kind of bread you want for a French toast recipe!
For gluten free: you can use your favorite gluten free bread; however, there will be a gluten-free version of the vegan brioche bread coming on October 27, 2021, and I’ll be sure to update this post with that option!
Ingredients and substitutions
Here’s what you need to make vegan Pumpkin French toast:
- Bread: As I mentioned above, vegan brioche bread is the best option here! For gluten free, use your favorite gluten-free loaf.
- Dairy free milk: I recommend a super creamy dairy free milk, such as Forager Project’s oat milk or coconut milk. For a no-coconut taste, definitely use the oat milk!
- Pumpkin puree: Because you can’t have pumpkin French toast without it!
- Aquafaba: This replaces the eggs found in a traditional French toast recipe and what makes this vegan French toast recipe taste just like the classic.
- Maple syrup: To keep this French toast recipe refined sugar free, I used maple syrup. It also lends a really nice flavor to the pumpkin spices!
- Pumpkin spice blend: This is a blend of cinnamon, nutmeg, ginger, cloves, and cardamom. I purchase my blend in stores, but you can also make your own pumpkin spice blend if that’s not available.
- Arrowroot starch: You can also use cornstarch- this helps achieve that custard texture so don’t omit!

Here, we’ll go over a brief overview of the steps, along with providing visuals for a better understanding of the recipe.
As I mentioned above, it takes just 5 minutes to prep this pumpkin French toast, and only 5 minutes to cook. Your vegan French toast will be ready to serve in just 10 minutes tops! If you’ve made vegan French toast before, then making a pumpkin version is quite similar. However, if you’ve never made it before, here’s just how easy to is:
How to make vegan pumpkin French toast:
- Mix the pumpkin French toast batter:
Combine all wet ingredients in a large bowl and whisk together vigorously.
- Dip the bread:
Using only one slice at a time, dip the vegan brioche bread into the pumpkin batter. Make sure to fully submerge the slice, and let it soak for 2-3 minutes. Then repeat for the remaining slices. As the batter is soaked into the bread, there will be less batter in the bowl, so you may need to flip the slices to ensure that both sides of the bread are fully coated.
- Cook the pumpkin French toast:
I recommend using a pancake griddle for easy cooking and transferring to plates. That way, you can also cook all slices simultaneously! Otherwise, you can use a large saucepan. If you don’t have a large saucepan, simply cook one slice at a time! You’ll cook each side until lightly golden brown, about 2-3 minutes.
- Serve!
Once all slices are cooked, you can serve your vegan pumpkin French toast!
Can I swap out the aquafaba?
I’ve tried several different ways to make vegan French toast with many different vegan egg options. Aquafaba is really the only way to get this recipe to taste like traditional pumpkin French toast. There’s no after-taste, no visible flecks of seeds, and it cooks just like regular eggs.
You can use store-bought aquafaba by draining a can of unsalted chickpeas or make your own aquafaba! The make-your-own version does take quite a bit longer, and this pumpkin French toast recipe is designed to be quick and easy; so I suggest using store bought!
How to serve pumpkin French toast:
I love to serve this vegan French toast recipe with a pat of vegan butter and a drizzle of maple syrup. You can also top with coconut whipped cream, a sprinkle of more pumpkin spice, or even sprinkle on some chopped nuts or chocolate chips!

Ingredients
- 4 slices vegan Brioche bread (or thick gluten free bread)
- 1 cup unsweetened dairy-free milk (such as oat milk)
- 1/3 cup canned pumpkin puree
- 1/3 cup unsalted aquafaba*
- 2 tbsp maple syrup
- 1 tbsp pumpkin pie spice blend*
- 1 tbsp arrowroot starch or cornstarch
- 1 tsp vanilla extract
Instructions
- Please read through all instructions before beginning.
- Prep: Measure out all ingredients. Make sure the pancake griddle or pan is greased and ready to be heated. Be sure that you have a plate to put the soaked bread slices and another plate to put the cooked French toast.
- Make the French toast batter: In a large bowl, whisk together all ingredients, except for the bread. Mix until combined.
- Dip the bread: Dip only one slice at a time, soaking the bread completely underneath the liquid. Soak for 1 minute. Then remove the bread slice and place it onto a plate or baking sheet. Repeat for the remaining slices. As the liquid lessens, you’ll need to flip the slice and soak the other side as well to fully soak in the liquid.
- Cook the pumpkin French toast: Heat a large saucepan or pancake griddle with oil or vegan butter. Once hot, place the French toast slices onto the griddle to cook for 1-2 minutes. Then flip and cook on the other side. Cook until the sides are lightly golden. Then place onto your plate.
- Serve! Serve the pumpkin French toast with maple syrup, coconut whipped cream, a dash of pumpkin pie spice, pecans, walnuts, chocolate chips, or vegan butter. Enjoy!
- Storage: Store any leftover slices in an airtight container and in the fridge for up to 5 days or in the freezer for up to 3 months.
Notes
Aquafaba: Please make sure that your can of chickpeas is indeed unsalted. Salted aquafaba will ruin this French toast recipe! You can also make your own aquafaba. It is more work, but if you’re unable to find unsalted chickpeas, then this is the route to go!
